Can you use chicken thighs for this recipe?
The main part of the recipe will be grilling the chicken on the pellet grill, this will be where you get the smoky flavor.
The smoked chicken can be made with either chicken breast or chicken thighs. Chicken thighs will be more tender and juicy than chicken breast; however, this meal is traditionally done with chicken breast.
How do you make this recipe gluten-free?
The only swap needed will be to use a gluten-free all-purpose flour. We use King Arthur or Better Batter; however, Cup 4 Cup and Bob’s Red Mill work well too. Be sure it’s a 1:1 even swap ratio.
All other ingredients are naturally gluten-free; however, always check all ingredients to be sure they fit your dietary needs.
What wood pellets should you use on the smoker or pellet grill?
The best wood pellets for this recipe will include milder choices that will not overpower the creamy sauce. These include Pecan, Apple, or Cherry wood pellets. A blend of pellets will work well too and give it a nice subtle smoky flavor.
How do you Make Marry Me Chicken on the Pellet Grill?
The pellet grill will be prepared and preheated to medium heat of 350 degrees F. While the grill is preheating, the chicken will be seasoned. Once the grill is ready, the chicken breast or chicken thighs will be placed directly on the grill grates.
Once the lid is closed, let the chicken cook on each side for about 10 minutes or until the internal temperature reaches at least 165 degrees F. This is best checked with a meat thermometer. This is a must-have when making any meat as you will always have the perfect temperature.
While the chicken is cooking, it’s time to prepare the creamy chicken sauce.
Using a large skillet or cast iron skillet, the sauce will be prepared following the recipe instructions in the recipe card below. The sauce can be prepared over medium-high heat in a large skillet on the stove or on the side burner to the pellet grill if your grill has one.
Next, the sauce will simmer for about 5-10 minutes until it is smooth and thickened but still able to drizzle. When the chicken is complete and reaches the correct temperature, remove it from the grill and place it directly into the prepared sauce in the skillet. Let this simmer for an additional 3-4 minutes and drizzle some of the sauce right over the chicken, it should be nestled in the pan.
Lastly, the entire dish can then be garnished with fresh parsley and freshly shaved Parmigiano or parmesan cheese.
