Tips for Making Gluten-Free Slow Cooker Marry Me Chicken:
The chicken breast comes in many different sizes and thicknesses, be sure that you have about 4-6 chicken breasts this will be the equivalent of 2 pounds. The internal temperature of the chicken should be at least 165 degrees F to be considered done. This can be checked with a meat thermometer.
Sundried Tomatoes will be used for this recipe, these come in a jar with oil. Be sure that you first pat these dry before chopping. If you prefer, you can also use smoked sundried tomatoes without oil. These would just be chopped and added to the dish.
The cooking time can vary depending on the size of the chicken breast, this can be cooked on HIGH for 3 hours or LOW for 5-6 hours, again it’s best to use a meat thermometer to check the temperature of the chicken as it nears the final hour of cooking.
When ready to serve, the chicken can be served whole or shredded and returned to the slow cooker and mixed with the sauce. This can then be served topped with gluten-free pasta if preferred.
Serve with freshly grated Parmigiano and fresh parsley. This recipe pairs well with asparagus or salad.
