- Set up the smoker to 225 degrees F.
- Add the ground beef to a bowl and mix in the onion soup mix.
- Make your burger patties and measure 8 ounces of ground beef per patty. Shape the ground beef into patties about 1/2 inch thick. (Make them smaller and make more burgers if preferred.)
- Place the burger patties onto the smoker grill grate and smoke until the internal temperature reaches 135 degrees F. (Usually takes up to an hour, depending on the thickness.)
- Increase the temperature of the smoker to 450 degrees F. Once this has been reached, quick sear the patties on both sides for 2-3 minutes. Add cheese slices after the last flip if desired.
- Burgers are done when the internal temperature reaches 165 degrees F.
- Serve with your favorite toppings!
What pellets should you use?
For a smoky, bold flavor, use hickory or mesquite. A wood blend will work well, such as a blend of hickory, oak, and mesquite. Cherry and Apple are best avoided as they may make the burgers a bit too sweet.
Tips for Making Smoked Onion Soup Burgers:
- Always use 80/20 Ground Beef – DO NOT use any leaner ground beef than 80/20, or it will dry out during the smoking process. It’s best to use 80/20 ground beef to keep the burgers juicy during the smoking process.
- Chill Before Cooking – This is not necessary, but if you are concerned about the burgers holding their shape, chill the ground beef for 30 minutes in the fridge after forming the patties.
- Use a Meat Thermometer – Use a probe or meat thermometer to monitor the temperature of the ground beef. The burgers will be smoked until they reach an internal temperature of at least 135 degrees F then they will be seared at a higher heat.
- Get creative with toppings – Add some crispy onions on top or a variety of cheese like pepperjack.
- Rest before serving – Let the burgers rest for 2-3 minutes before serving to let the juices redistribute throughout the burgers.
- For smaller burgers – This recipe is made into 4 larger patties with 2 pounds of ground beef. It is simple to use the 2 pounds to make 6 burgers instead if you prefer smaller burgers.
- Make on any Pellet Grill – These can be made on any pellet grill, like a Traeger. We use a Green Mountain Pellet Grill.
How do you store leftover smoked hamburgers?
Once fully cooled, store leftovers in an airtight container in the fridge for up to 3 days. When ready to serve, air fry at 350 degrees F for 4 minutes or place in the microwave on a microwave-safe plate for 1-2 minutes.
