Plus, it’s easy to make gluten-free with a gluten-free bun.
Adding a freezer meal or dump and go recipe to my weekly menu is an absolute MUST. I prefer to add a freezer meal that has been prepped in advance and ready to thaw and heat or a dump and go recipe at least once a week because it never fails, usually midweek we are scrambling to get dinner on the table. If I plan ahead, I skip take-out and can still get dinner going even on a busy night when I just have no time…anyone else have this issue? I am sure I’m not the only one. This recipe uses a beef chuck roast with a few pantry ingredients to turn a roast into a zesty sandwich.

What temperature should the roast be before shredding?
A roast will be done at 200 degrees F; however, we want this roast to cook to 210 degrees F to be the most tender and easiest to shred with a fork. Generally, a roast will take about 8 hours on LOW in the slow cooker.
This is best checked with a quick-read meat thermometer.
What should you serve Slow Cooker Dill Roast Beef Sandwiches with?
There are so many sides to choose from when serving these as a sandwich. This includes a variety of picnic salads or dips.
Alternatively, the shredded beef can also be served over rice, mashed potatoes, or in a quesadilla.
Freezer Meal Prep Instructions:
To prep this as a freezer meal, simply place the raw 3-4 pound chuck roast into a gallon-sized freezer bag and sprinkle the dry ranch seasoning directly onto the meat. Pour in the barbecue sauce and add the hamburger dill pickle chips (with a splash of juice for extra zest.). Finally, place the salted butter slices on top of the roast before sealing the bag, be sure you squeeze out as much air as possible to prevent freezer burn.
When you’re ready to cook, thaw the bag in the refrigerator overnight and then empty the contents into your slow cooker. Cook on LOW for 8–10 hours until the beef is tender enough to shred effortlessly with two forks, perfect for those busy weeknights when you want a high-flavor dinner with zero morning effort.
