Ingredients needed for Easy Potato Salad:
- Medium-Sized Potatoes (Russet Potatoes, Yukon Gold Potatoes, or Red Potatoes)
- Red Onion
- Celery
- Hard-Boiled Eggs
- Salt
- Pepper
- Paprika
- Sweet Relish
- Mayonnaise
- Yellow Mustard
Step-by-Step Instructions:
- Add potatoes to a large saucepan, cover with water, adding 1-2 inches above potatoes and cook until fork-tender.
- Remove from water, add to a large bowl with water and ice to stop the cooking process and make peeling easier. Leave in ice water for about 5 minutes.
- Remove skins from potatoes, rinse and cut into small cubes.
- Add to a large bowl with chopped celery, onions, and chopped eggs.
- In a small bowl, combine the other ingredients and whisk until well combined.
- Add to potatoes and stir to combine.
- Cover and store in the refrigerator until ready to serve.
- Store leftovers in an airtight container.
Do you need to peel the potatoes?
This will all be based on personal preference. I prefer to peel the potatoes for this Classic Potato Salad, but for the Red Potato Salad, I prefer to leave them on. Red potatoes have thin skin, which means you can skip peeling them.
It’s best to boil the potatoes in a large pot of salted water on high heat until they are fork-tender for 10-12 minutes. Then, drain and cool, they can easily be peeled. Alternatively, you can also peel them before boiling.
Which type of potatoes should you use for potato salad?
After years of making this recipe, I prefer Yukon Gold Potatoes, they tend to hold their shape well. Although I prefer that, classic potato salad is typically made with Russet Potatoes and those work very well for this recipe.
If you are looking for the ultimate potato salad trick, use red potatoes. These have thin skin, which means you can skip peeling them. So fi you’re in a crunch for time, this would be the best choice. They hold their ship similar to Yukon Gold as well.
Can you prepare the potato salad ahead of time?
Potato Salad is a cold salad, so this is best when prepared in advance and chilled in the fridge. It can stay in the fridge for 5-7 days.
