We use our pellet grill many times a week and have found it’s the best way to make Jalapeño Poppers! This recipe pairs the depth of that smoky flavor that comes from wood pellets on the pellet grill with the heat of Jalapeño Peppers, without really any work on your part!
This delicious appetizer is ready in just 30 minutes and comes out beautifully smoked and full of flavor plus creamy cheese filling too.

- Garlic Salt
- Cocktail Sausages
- Thick Cut Bacon
Do you need to add cocktail sausages?
This is my personal preference; however, I will say I think they taste much better with Cocktail Sausages, which elevate the appetizer and pepper. It also has a wonderful flavor profile.
The recipes I make for Jalapeno Poppers will include a cocktail sausage, it’s worth trying!
Tips for Making Pellet Grill Jalapeno Poppers:
- Use GLOVES – This is a MUST, be sure to use gloves when cleaning the peppers so that you do not burn your eyes or hands, sometimes those peppers can be extra hot!
- How many SEEDS? – The seeds hold almost all the heat from a pepper, so, we remove all the seeds to make them extra mild. If you do want extra heat, do not remove all the seeds.
- Choose FIRM Jalapenos – Make sure to choose firm jalapenos. They will soften as they cook, so it’s best to have firm jalapenos that will hold their shape.
- Don’t overstuff – Be sure to add just enough cream cheese to fill the pepper, they will spread during cooking so this will help you avoid any cheese falling on the grill grates.
- Use Toothpicks – If the bacon won’t hold, use toothpicks to secure it in place and remove it before serving.
What type of wood pellets should you use?
The pellet flavor that you use will directly enhance the flavor of the jalapeno peppers.
If you prefer a strong, smoky flavor then use hickory or mesquite wood pellets. For a sweeter or mild flavor use apple or cherry wood pellets. We typically use a pellet blend to get a balance between sweet and smoky.

Heat pellet grill to 375°F.

In a small bowl combine the cream cheese and garlic salt.

If not already, use gloves and then cut the peppers in half lengthwise, scoop and seeds out, and clean the peppers. Set these aside, this will give you 12 servings of jalapeno poppers.

Take half of each pepper and add a small amount of cream cheese mixture to fill the pepper.

Add one cocktail sausage.

Wrap the pepper with bacon, be sure to start the bacon on the bottom and finish it on top, secure it with a toothpick if needed. Set aside and repeat the steps for all additional peppers.

Place peppers on heated grill grates and close the lid.

Grill at 375°F for 30 minutes or until bacon is done and crispy.

Carefully remove peppers and serve.
