How do you make gluten-free chicken noodle soup?

To make this soup gluten-free, use gluten-free all-purpose flour to make the homemade noodles. This will need to be a 1:1 ratio of flour with regular flour. We prefer to use King Arthur Gluten-Free All-Purpose Flour, Better Batter, Cup 4 Cup, or Bob’s Red Mill.
All remaining ingredients are naturally gluten-free; however, as always check all ingredients before using to be sure to avoid cross-contamination.
What pressure cooker should be used for homemade soup?

This recipe will work with any pressure cooker that has both the pressure cooker and saute function. Our preferred pressure cookers are the Ninja Foodi Multi-Cooker and Instant Pot. The latest pressure cooker from Pioneer Woman works well too.
Tips for Making Homemade Chicken Noodle Soup:

- Chicken Thighs or Rotisserie Chicken – Use chicken thighs or leftover chicken from the rotisserie. The chicken thighs will stay more tender and juicy than the chicken breast, which dries out more quickly.
- Homemade Noodles or Store Bought – Use Homemade Noodles as indicated in the recipe card below or swap with egg noodles of your choice.
How do you store leftovers?
Once the soup has fully cooled, store leftover soup in an airtight container in the refrigerator for up to 4 days.
When ready to reheat, heat on the stovetop on low heat for 3-5 minutes or in the microwave in a microwave-safe dish for 1 minute. If needed add additional broth or water to restore consistency.

Using the pot that goes with the pressure cooker, add the chicken broth, water, chicken, carrots, celery, and seasonings.

Secure the pressure cooker lid to the pot and machine.

Move the nozzle to seal and set the pressure cooker function to high pressure for 6 minutes.

While the soup is cooking, combine the salt and flour in a large bowl for the noodles.

Make a well or low point in the center of the flour and add in the eggs.

Use a fork to combine the flour and eggs until it's slightly sticky, forming the dough into a ball. If needed use more flour to avoid it sticking too much. Knead this for about 2 minutes until a ball is fully formed.

Wrap it in plastic wrap and let it sit in the fridge for about 10 minutes while the pressure is building for the soup.

After 10 minutes, roll the dough out until it's about 1/4 inch thick and cut to the width that you prefer.

Set these on a wire rack to dry out a bit until the soup is done.

Let the soup naturally release (don't do anything) for 5 minutes once it's done cooking.

After 5 minutes, do a quick release of the pressure and remove the lid.

Turn the pressure cooker to the saute function and add in the noodles.

Cook these for 5-7 minutes on the saute function.

Remove the lid and serve, adding salt and pepper to your preference.
