What ingredients do you need for a Gluten-Free Sweet Potato Casserole?

  • Butter
  • Maple Syrup
  • Salt

  • Cinnamon

  • Eggs
  • Pecans
  • Marshmallows

How do you cook the sweet potatoes?

When you are ready to make sweet potato casserole, the first thing you should do is cook the sweet potatoes. These need to be ready to mash up into the casserole being fork tender. They can be mashed with a hand mixer or potato masher. The potato masher works well at mashing them while not overdoing it. They do not need to be pureed, just lightly mashed.

Our preferred method is to cook them in the Ninja Foodi or Instant Pot with this Ninja Foodi Sweet Potatoes recipe. They can be cooked right in the pressure cooker and the skin will come right off when they are fully cooked.

The other option is to cook them in a pot of boiling water on the stove, which is also an easy way to prepare the potatoes. If using this method, be sure to peel the potatoes first. Once the potatoes have boiled on medium-high heat in a large stockpot for 15-20 minutes, they should be fork-tender, remove them and begin to prepare the sweet potato mixture.

Either option will work, just be sure they are soft and easily mashed before moving on with the gluten-free sweet potato casserole.

How do you make Maple Pecan Sweet Potato Casserole?

As mentioned above, first you need to be sure the potatoes are fully cooked and ready to mash.

At that point, you will simply be mixing in each ingredient using a large bowl to make the sweet potato mixture. The full recipe instructions will be in the recipe card below. Remember to use a 9×13 casserole dish to pour the mixture into.

The not-so-secret ingredient is the real maple syrup along with those wonderful crunchy pecans that will be used for the pecan topping.

How do you prepare the pecan topping?

After 15 minutes of baking at 350 degrees F, the casserole will be carefully removed and topped with pecans, marshmallows, and a dash of ground cinnamon. This will create a marshmallow topping that has a nice crunch with the pecans. If you are allergic to pecans, skip the pecans but do the marshmallow topping.

How do you store leftover sweet potato casserole?

Once the casserole has cooled completely, store the leftovers in an airtight container or cover the casserole dish with plastic wrap.

Place in the refrigerator for 3-4 days. When ready to serve, use a microwave-safe plate and heat for 1 minute or bake in the oven at 350 degrees F for 5-10 minutes until warm.

    Preheat oven to 350°F.

    Be sure the potatoes are cooked and peeled. These can be peeled and boiled in a large stockpot until soft if you have not already cooked them.

    Place cooked potatoes in a large mixing bowl, then add in the cream, butter, syrup, salt, pepper, vanilla, cinnamon, and allspice. Mix this well.

    Beat in the egg.

    Fold in chopped pecans.

    Spray a 9x13 casserole dish with nonstick cooking spray, and spread the mashed sweet potato mixture in evenly.

    Bake for 15 minutes at 350°F.

    Carefully remove, sprinkle with marshmallows, pecans, and a dash of cinnamon.

    Bake for an additional 10-12 minutes or until marshmallow is slightly browned.
