{Back to School Week} Heart Shaped Eggs & Bento Box

It’s back to school season! I have been gearing up on my blog for Back to School.
Why? I’m excited! My son is starting Pre-K this year and although I am plagued with all those worries that haunt all parents, I’m also pretty excited about his new adventure! I know he will enjoy this school year but part of going to school comes packing a good, healthy lunch!
I typically always pack my son’s lunches, I just prefer my own food. I know what goes in it. I also know how picky my son is is when it comes to food so I usually pack it with a good variety of foods because there is just no telling from day to day what mood he will be in as far as food goes!
One thing I know he loves are shaped eggs. What are shaped eggs? Basically all you do is crack and egg into a muffin tin and let it bake for a few minutes…then it comes out in the shape of the muffin tin.
Fabulous, right?
I thought for his first week back I would do the heart shaped eggs with our heart muffin tin. I also like to use Great Day Farms Organic Eggs!
This gives my son a good boost of protein in his lunch and it’s healthy for him. Plus, it is a very clean way to eat an egg.
Another great way to add egg to a lunch quickly is with the Great Day Farms Hard Boiled Eggs! I use these all the time in lunches and on that wonderful Italian Salad!
Along with his egg, I also pack his lunch with sweet potato fries, pizza cups, macaroni and cheese, a little bit of popcorn, and a fruit. Generally, I will do small amounts of each, but there is something about being at school all day that makes him hungry! We pack ours in an Easy Lunchbox!

Preheat the oven to 350*.

Spray the tin with nonstick baking spray.

Crack an egg into each heart in the muffin tin. Let these bake in the oven for 15-20 minutes, mine took about 20 minutes.

Let them cool for a few minutes and remove from muffin tin.
