Chicken Chili uses simple ingredients, and it’s a dump-and-go recipe that can be cooked anywhere from 6-8 hours, which makes it great for those needing dinner to cook while you work. This recipe is also simple to make gluten-free with just a few swaps.

  • Cumin
  • All-Purpose Flour or Gluten-Free All-Purpose Flour

Step-by-Step Instructions:

  1. Using a 6-quart slow cooker, add the cooked chicken, beans without draining, chicken broth, diced tomatoes, onion, chili powder, and cumin. Stir well to combine.
  2. Cover and cook on LOW for 8 hours. (It can be served anytime after 6 hours.)
  3. After 6-8 hours of cooking, remove the lid, remove about 1-2 tablespoons of broth and add to a small bowl, whisk in the flour to create a roux.
  4. Whisk the roux into the chili, cover, and let it sit on WARM for 30 minutes before serving.
  5. Serve.

  • Make it Gluten-Free – If making gluten-free, use gluten-free all-purpose flour. Always be sure to check all ingredients before using to be sure that they are gluten-free, as not all brands are equal. We use Bush’s Northern Beans for ours.
  • Make it Spicy – This chili is very mild; if you prefer spicy, add red pepper flakes or sriracha sauce.
  • Creamy Chili – If you want to make it extra creamy, stir in a block of room temperature cream cheese. This will add a rich layer to the flavor.
  • Serve it with Cornbread – We ALWAYS serve ours with Gluten-Free Cornbread!
