What ingredients do you need for Barbecue Chicken Skewers?
- Boneless, Skinless Chicken Thighs
- Barbecue Sauce
- Skewer Sticks
This is all you need for this recipe, the barbecue sauce can be homemade barbecue sauce or store-bought barbecue sauce, it’s your choice!
What pellets should you use for this recipe?
This recipe can be made with any pellets; however, our favorites are hickory or mesquite.
These two choices will enhance that barbecue flavor and make the chicken taste nice and smokey.
Remember that choosing pellets is important because it will directly enhance the flavor of the food you are preparing.
Can you use chicken breast for this recipe?
Barbecue Chicken Skewers are best made with chicken thighs NOT chicken breast. The chicken breast do not slice as well or lay the same on the skewer. They also dry out faster and these will remain juicy during the grilling time.
Tips for Making Pellet Grill Barbecue Chicken Skewers:
Metal skewer sticks are the best choice for these skewers. We have been able to find these easily at Walmart or Target. They are also easy to clean and reusable.
Once you are ready to prepare your chicken, slice the chicken in half lengthwise, then place each slice of the chicken carefully onto the skewer stick. This can be woven right onto the stick. This means that each stick will have a full piece of chicken on it; however, we are cutting it in half lengthwise to better fit the skewer stick.
Once all the chicken has been prepared on the skewer sticks, they will be coated with barbecue sauce. Coat each piece as thoroughly as possible.
The skewers will be placed on the warm pellet grill at 450 degrees F. These will cook for about 12 minutes, then flip and cook for an additional 10-12 minutes.
For best results, use a meat thermometer or the probe with the pellet grill to watch the internal temperature. The grilled chicken needs to be at least 165 degrees F to be considered well done.
If you need more than 4 skewers, simply add additional ingredients.

Preheat the pellet grill to 450°F.

Cut each chicken thigh in half lengthwise.

Carefully add 2 pieces of cut chicken to a skewer stick, weaving it onto the stick. This means that each stick will hold one whole chicken thigh; however, it's been cut to fit better.

Pour out about 1/2 cup of sauce into a dish and reserve the rest for serving.
