Strawberry Angel Fluff has been our go-to recipe for Easter and even Valentine’s Day for many years. It’s also an easy recipe to make gluten-free if that’s a need too. This recipe combines gluten-free angel food cake, creamy whipped topping, and sweet, juicy strawberries layered into an irresistible gluten-free dessert.

The best part is that if gluten-free is not a need, this can easily be made no-bake with store-bought angel food cake! The choice is totally up to you to make it from scratch or with a little help!

Step-by-Step Instructions:

  1. Note that you need to make 2 of the Angel Food Cakes.
  2. Begin by sifting the flour, sugar, and salt in a large stand mixer.
  3. Add in the egg whites, cream of tartar, and vanilla extract, mixing well.
  4. Pour the batter into a greased Bundt pan.
  5. Place the cake in a cold oven, then set it to 325 degrees F and bake for 1 hour or until golden brown. Repeat these steps for the second angel food cake.
  6. Let cool and set aside.
  7. Place the powdered sugar and cream cheese in a mixing bowl.
  8. Mix it well until it is a smooth consistency, and then add in the cool whip (add pecans if you use them).
  9. Continue mixing until well combined.
  10. Tear the cakes into small pieces and place in a large mixing bowl then coat it with the cream cheese mixture, be sure that all of the cake is well coated.
  11. In a large trifle dish, place half the mixture on the bottom, then top it with a can of the strawberry pie filling.
  12. Place the remaining mixture on top of the filling and then complete it with the additional can of strawberry pie filling.
  13. Chill for 2 hours, then serve or serve immediately.

What type of Gluten-Free All-Purpose Flour should you use?

The gluten-free all-purpose flour is the most important part of making this recipe gluten-free. I am a very simple gluten-free baker and do not use any fancy ingredients except gluten-free all-purpose flour. That means that a very high-quality flour is needed that is a 1:1 ratio or measure-for-measure flour with regular flour.

The best ones to use are King Arthur Gluten-Free All-Purpose Flour, Better Batter, Cup 4 Cup, or Bob’s Red Mill. The flour needs to have Xanthan Gum already in the flour mixture, this will allow the dessert to come out with the same texture as its gluten-filled alternative.

This recipe will use two of the homemade angel food cakes, so be sure to make two of them. The recipe card below includes the full instructions to bake the angel food cake as well.

If you do not need a gluten-free desert and want this to be done as a no-bake recipe, a store-bought angel food cake will work, but again, it will be made with two angel food cakes, so be sure to purchase two.

The whipped topping will be prepared in a mixing bowl and can be done with a stand mixer or electric mixer. It will be a combination of Cool Whip Cream or Whipped Topping, cream cheese, and powdered sugar.

The prep time will vary depending on whether you are doing a gluten-free angel food cake from scratch or a no-bake option.
