This chicken dip is naturally gluten-free; however, it needs to be served with gluten-free serving options such as gluten-free pretzels, carrots, or celery sticks.

Remember to check all ingredients before using to be sure the ingredients you choose are gluten-free.

This chicken dip has a mild spicy flavor, if you want to add more heat, add in cayenne pepper or jalapeños, this will intensify the level of heat and spicy flavor!

Can you make this in advance?

This dip can be fully prepared and stored in the refrigerator until you are ready to smoke the dip on the grill. When ready to smoke on the grill, set the grill to 300 degrees F and smoke for 1 hour in a cast iron skillet.

Tips for Making Smoked Buffalo Chicken Dip on the Pellet Grill or Smoker:

The first step is to cook the chicken breast or use already prepared shredded chicken. It’s best to add half the ranch seasoning to the chicken to add some flavor.

Once the chicken is cooked, then the remaining ingredients will all be combined in a large mixing bowl. If needed, use a handheld mixer to break apart the cream cheese. It should be at room temperature so that it easily mixes.

When ready to grill, use a cast iron skillet or a disposable aluminum pan that can go on the grill. We used 2 6-inch cast iron skillets to have dip for multiple tables of guests. It can be done though in a single skillet as well.

It’s best to use a block of cheese and grate it yourself with a cheese grater. The pre-shredded cheese has ingredients in it to avoid sticking together or melting together, so this does not melt as well as a block of cheese would.

How do you store leftover buffalo chicken dip?

Once the dip has cooled, leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

    Preheat the pellet grill to 350°F.

    Pat the chicken breast dry, then sprinkle about 1 Tbsp or half of the ranch seasoning on the chicken breast.

    Place the chicken breast on the grill grates of the pellet grill and cook on each side for 10-15 minutes or until the internal temperature reaches at least 165°F.

    Once fully cooked, remove the chicken breast, shred with 2 forks and set aside.

    In a large mixing bowl, add the buffalo sauce, cream cheese, and shredded cheese.

    Mix this well, use a handheld mixer if needed to break apart the cream cheese.

    Fold in the shredded chicken.

    Use an 8-inch cast iron skillet, 12-inch cast iron skillet, or 2 6-inch cast iron skillets and equally divide the dip into each skillet or all in one skillet. This can also be placed in an aluminum pan that is safe for the pellet grill.

    Lower the heat on the pellet grill to 300°F.

    Place prepared skillets directly onto grates of pellet grill and close the lid. Let this smoke for 1 hour.

    After 1 hour, carefully remove and serve with sides of choice such as pretzels, carrots, or celery.
