Jambalaya typically takes a lot of time to cook due to the simmering that allows all the flavors to develop and combine; however, with the pressure cooker, it’s easy to get those same flavors without the long cooking time. The pressure cooker locks the flavor in creating a delicious blend of Cajun flavors all in one pot!

- Cooked Shrimp
- Andouille Sausage
- Boneless, Skinless Chicken Thighs
- Onion
- Celery
- Garlic
- Bell Pepper
- Dried Thyme
- Cajun Seasoning
- Long Grain White Rice
- Salt
- Diced Tomatoes
- Chicken Broth
- Bay Leaves
- Green Onions to Garnish
- Parsley to Garnish
If you are making this recipe gluten-free, be sure to check ALL ingredients before using, primarily being sure there is no cross-contamination. This Cajun Seasoning is a great alternative to store-bought Cajun Seasoning too, plus naturally gluten-free.
What pressure cooker should you use?
This recipe can be made in ANY pressure cooker that has the SAUTE and PRESSURE COOKER functions. This would include an Instant Pot and Ninja Foodi Multi-Cooker. The latest Pioneer Woman Pressure Cooker works well too.
Tips for Making Pressure Cooker Jambalaya:
- Rice Makes a Difference – Use White Long Grain Rice for this recipe! This is NOT Minute Rice, which will not cook the same way and the cooking times would not be the same.
- Add more Spice! – If you want to add even more spice, add red pepper flakes or chili powder into the mix. The recipe as written is mild.
- Follow Instructions Carefully – Be sure to read the recipe card carefully as there are multiple steps for this recipe to get all ingredients cooked properly.

Set the Pressure Cooker to Saute and add the olive oil.

Add the sausage and cook for about 5 minutes until browned.

Remove from the pot and set aside.

Add the chicken and cook until browned, about 5 minutes, set aside with the sausage.

Add the onions, celery, bell pepper and garlic, cook until onions are translucent about 2-3 minutes.

Add the thyme, 1 tsp of cajun seasoning and salt and stir well.

Stir in the chicken broth and bay leaves.

Return the sausage and chicken to the pot.

Add in the tomatoes and rice.

Stir it up well.

Turn off the Pressure Cooker.

Secure the pressure cooker lid onto the pot and set the nozzle to 'seal'.

Pressure cook on high for 7 minutes.

Dry the shrimp with a paper towel and coat with 1 tsp of cajun seasoning.

Once the 7 minutes is up, quickly release the steam by moving the nozzle to 'vent'.

Carefully remove the lid.

Remove the bay leaves.

Carefully add the shrimp and stir it up.

Secure the lid back onto the pot, set to 'seal', for about 10 minutes to allow the shrimp to warm up.
