This recipe will use a pressure cooker such as an Instant Pot, Ninja Foodi, or your favorite brand! Be sure that your machine has the SAUTE function as this recipe will use that as well.

    NOTE - This recipe uses the SAUTE setting, so be sure your pressure cooker has this setting before moving forward. This is found on most new pressure cookers as well as the Instant Pot and Ninja Foodi.

    Use the SAUTE setting, and swirl the olive oil in to coat the pot. Add the cooked bacon, onion, celery, garlic, salt, pepper, and time to the pot. Cook for 3-5 minutes or until the onions and celery are softened.

    Add chicken broth to the pot and scrape down the sides and bottom to remove any bacon bits if needed.

    Turn off the Pressure Cooker.

    Stir in the cut potatoes.

    Place the pressure cooker lid on the machine and place the nozzle to SEAL, then cook at high pressure for 8 minutes.

    When the timer goes off, carefully quickly release the steam by turning the nozzle to VENT.

    In a small bowl, whisk together the 2 tbsp of milk and cornstarch to make a slurry.

    Remove the lid from the pot and set the pressure cooker to SAUTE.

    Pour in the remaining 1 cup of milk, cream, and the slurry.

    Whisk this in to combine and let it come to a boil for about 5 minutes or until desired consistency is reached.

    Turn off the pressure cooker and let cool for 5-10 minutes before serving.
