This soup combines all that zesty flavor of enchiladas into a delicious gluten-free soup. We pair ours with Tortilla Strips, but you can also choose Tortilla Chips.

What ingredients do you need for Pressure Cooker Enchilada Soup?

  • Cooked and Shredded Chicken
  • Taco Seasoning
  • Black Beans
  • Diced Tomatoes with Green Chilies
  • Mild Red Enchilada Sauce
  • Chicken Broth
  • Corn
  • Water
  • Half and Half
  • Shredded Sharp Cheddar Cheese
  • Toppings – Sour Cream, Cilantro, Gluten-Free Tortilla Strips, or Tortilla Chips

All ingredients in this recipe are naturally gluten-free; however, not all brands are gluten-free. Be sure to check the ingredients you choose to be sure that there is no cross-contamination if making gluten-free.

What type of pressure cooker should you use?

This recipe can be made in any standard pressure cooker such as an Instant Pot, Ninja Foodi, or your preferred brand such as the Pioneer Woman Pressure Cooker.

Does the chicken need to be cooked before adding to the soup?

This recipe uses cooked and shredded chicken. There are a few ways you can easily cook the chicken before adding it to the soup.

Either of these methods will work to cook the chicken quickly or add it straight to the soup, but be sure it is cooked before adding as the cooking time for this recipe is based on using cooked chicken.

Tips for Making Pressure Cooker Enchilada Soup:

  • Dairy ingredients will be added AFTER pressure cooking, this includes the half and half and cheese.
  • Want it even spicier? If you prefer spicy, use medium enchilada sauce and add in chili powder or cayenne pepper.
  • Use up your leftovers! Use leftover rotisserie chicken or leftover chicken to make this soup.
  • Mix up the protein! If you want to make Beef Enchilada Soup use ground beef and beef broth.

How do you store the leftover enchilada soup?

Allow the soup to fully cool, then transfer to an airtight storage container. Store the leftovers for 3-4 days in the refrigerator. When ready to reheat, warm up in a small saucepan on medium heat on the stove.

    In the pot of the pressure cooker, combine the cooked chicken, taco seasoning, black beans, diced tomatoes, enchilada sauce, chicken broth, corn, and water.

    Secure the pressure cooker lid and move the nozzle to SEAL.

    Cook on high pressure for 4 minutes.

    Once done, quick release the steam by moving the nozzle to VENT.

    Carefully remove the lid and stir in the half and half and shredded cheddar cheese.
