Squash & Green Pepper Saute is a delicious light side dish.

Are you all enjoying all the garden fresh produce this season? I know, I am!

I feel like my husband and I have not had a chance to really take care of our garden as we normally have in the past. He is also usually in the kitchen with me helping me prepare and can some of the produce. This year has been very different for us.

My husband took on a side job this summer and was immensely blessed with business. He loves it but definitely underestimated the time it would take to do everything.

So, a few things hit the back burner and sadly our garden was one of them. Now, don’t get me wrong it’s still growing strong and has lots of produce but he is a stickler about his garden.

How do you make Squash & Green Pepper Saute?

We have been growing lots of squash this year, so I decided to make a Squash & Green Pepper Saute inspired by this recipe from Cooking Light for Sauteed Baby Squash with Basil.

Garden fresh produce is so simple to add a little garlic and olive oil to then sauteed to perfection.

That’s exactly how this dish came out!

I’ve also got a fetish for Feta this year…yes, I had to say that.

It just adds such a great boost of flavor to garden fresh produce.

    Coat a medium skillet with the olive oil.

    Add in the squash, bell peppers, and basil. Begin to warm this up on medium heat.

  3. 3

    Add in the garlic, salt, and pepper.

  4. 4

    Continue cooking on medium heat for about 10 minutes until the veggies are soft.

  5. 5

    Serve topped with Feta Cheese.
