Step-by-Step Instructions:
- Cook the pasta according to the directions on the package. Drain and add 2 tablespoons of olive oil to prevent the pasta from sticking together. - Add the diced bell peppers and mix well.
- Pour in the beef broth and Marinara sauce, mix well.
- Cook on LOW for 2 1/2 to 3 hours.
- Add in the sour cream; to avoid curdling, mix a bit of hot broth in a small bowl with the sour cream before adding it to the slow cooker.
- Continue to mix until well combined.
- Add in the cooked pasta and mix well.
- Sprinkle the cheese and mix it into the ingredients.
- Cook on LOW for 30 more minutes until the pasta is warmed.
- Serve.
Tips for Making Slow Cooker Taco Pasta:
- Make it spicy with Cayenne Pepper or Red Pepper Flakes.
- Use high-quality Gluten-Free Pasta such as Jovial, Barilla, or Good & Gather. Fully drain the pasta and rinse if using gluten-free.
- Make it ahead by browning the meat the night before and preparing the pasta. Store in the fridge until you are ready to add to the slow cooker or Crockpot.
- Make sure to add the cooked pasta at the end of the cooking time as written in the recipe instructions so that it does not get mushy.
- Swap the envelope of taco seasoning with 2 tablespoons of homemade seasoning.
How to store leftovers:
Once fully cooled, store in the fridge for up to 3 days. Reheat in the microwave on a microwave-safe plate for 1-2 minutes. If needed, add a splash of broth to help soften the pasta.
Gluten-Free Slow Cooker Taco Pasta is a quick, simple meal to make during the week with a little bit of help from your Slow Cooker or Crockpot to be able to let it cook while you get other things done!
