I recently shared this delicious Slow Cooker Pumpkin Stew, so today I thought I’d take some time to show you how to make it in the Pressure Cooker too. If you’re short on time then using your Pressure Cooker can have dinner on the table in less than an hour. This creamy, delicious cozy bowl of beef stew is the perfect choice paired with Homemade Cornbread.
What pressure cooker should you use for Pumpkin Stew?
I still use my Ninja Foodi Pressure Cooker to make this stew, so it can easily be Ninja Foodi Pumpkin Stew.
This can also be made in an Instant Pot or any Pressure Cooker that you may be accustomed to using. It will work the same way in either.
What type of canned pumpkin should you use for stew?
This stew recipe is made with canned pumpkin puree, this does not have any additional spices in it. The other option is Canned Pumpkin Pie Puree, this DOES have spices in it and is not the correct one. Be sure to choose the Canned Pumpkin Puree, because you will be adding in the additional spices.
The Pumpkin Pie Filling will make this overpowering, so we are going for a subtle flavor not overpowering.
How do you thicken beef stew without flour?
This recipe will use cornstarch instead of flour to thicken it, making it naturally gluten-free too.
Expert Tips for Pressure Cooker Pumpkin Stew:
This stew is naturally gluten-free and can be paired alongside Homemade Cornbread, this cornbread can also be made gluten-free. If you prefer to make the cornbread in the Ninja Foodi, try this Ninja Foodi Cornbread.
When making this stew in the pressure cooker, we like to sear the meat or brown it first on the saute function before pressure cooking; however, if you were to skip this step, the meat would still cook.
The meat should be at least 165 degrees F internally before serving. It should be WAY more than this after pressure cooking. The meat will be super tender and fall apart as you eat it.
After pressure cooking, you will then do a mix of natural release – meaning you do nothing for five minutes before moving the nozzle to vent and quick-releasing the rest of the steam. Be sure to fully read the recipe instructions in the recipe card below.
How do you store the leftovers?
Once the stew has fully cooled, store the leftovers in the refrigerator in an airtight container for up to 3 days.
When ready to reheat, warm on the stove on medium-high heat in a saucepan or in a microwave-safe bowl in the microwave for 1-2 minutes.

Turn the Ninja Foodi or Pressure Cooker to SAUTE, add the olive oil to the pot of the pressure cooker or Ninja Foodi, and then add the stew meat and onion to the pot along with salt and pepper. Lightly brown meat, the meat does not have to be cooked all the way through. This step is simply to lightly sear the meat.

Turn the pressure cooker OFF and add in the broth, bay leaf, paprika, garlic, Worcestershire Sauce, potatoes, carrots, celery, canned pumpkin, and pumpkin pie spice. This should be added on top of the meat and onions.

Secure the pressure cooker lid and set the nozzle to SEAL.

Pressure cook on HIGH manual pressure for 30 minutes.

Once the timer goes off, do nothing for 5 minutes, let it naturally release.

After 5 minutes, move the nozzle to VENT and quickly release the remaining pressure.

Whisk together the cornstarch and water to make a slurry, then whisk into the stew.

Let cool for 5 minutes to thicken and serve.
