It’s back-to-school season, and that means back-to-school breakfast for kids is up next on the list of to-dos! These back-to-school breakfast ideas are quick, easy to make, delicious, and many can be prepped ahead and frozen to use later, too!

These breakfast ideas can help you prep ahead for your work, right along with these lunch recipes for back-to-school, too. I like to have a general idea of items we can make ahead for breakfast. This way, some of these items, like breakfast burritos, I can prep and freeze so that everyone can easily heat one as they head right out the door, including myself!

Tips for Back-to-School Breakfast:

  • Prepare items in advance that can be frozen and reheated in the morning.
  • Just like menu planning dinner, menu plan breakfast too, which helps you save time and money.
  • Try to keep the sweet stuff to a minimum and go for protein-filled options.
  • Keep grab-and-go options healthy, such as breakfast burritos, fruit, or nuts.

These are just a few quick tips as you plan out your breakfast. I will be showing a variety of options today, some of which can be done as a grab-and-go, freezer style, or casseroles that you can keep leftovers of throughout the week to heat up.

Quick and Creative Ideas for an Easy Breakfast:

  • Keep a Breakfast Basket that has muffins, granola bars, and trail mix for on the go.
  • Do themed breakfasts such as Muffin Mondays, Toast on Tuesdays, Waffle Wednesday, To go Thursdays, Freezer Fridays, to keep it fun and organized.
  • Have lots of protein-packed items on hand, like yogurts in the fridge to take on the go.
  • Prep ahead and meal prep as much as possible, especially for freezer items like making freezer-friendly burritos.

What breakfast can be made gluten-free?

Almost all of the options I share in the list below will be available to be made gluten-free, too, and many are naturally gluten-free. Each recipe card will indicate what ingredients to use to make that recipe gluten-free. I have eaten gluten-free for over a decade, so I try my best to make sure there are plenty of options!

The key to breakfast is to keep it simple and prep-ahead as much as possible because we all know that fixing a satisfying breakfast early in the morning can be a challenge. When it’s prepped ahead, it makes it much easier!

    In a large skillet, heat up the oil.

    Cook the hash browns until golden brown and remove to a paper towel-lined plate.

    Add sausage, onion, and peppers to the skillet and cook until no pink remains, drain if needed.

    Add hash browns back to the pan.

    In a small bowl, whisk together the eggs until lightly beaten.

    Pour into the skillet and cook until set, stirring frequently.

    Add salt and pepper to taste.

    Heat tortillas in the microwave for 8-10 seconds in order to roll easier.

    Spoon filling onto bottom 1/3 of tortilla.

    Sprinkle with cheese.

    Fold sides and then the ends over and roll up as tightly as possible.
