This recipe uses gluten-free refrigerated cookie dough pressed into a tree-shaped pan, baked until golden brown. Once it’s completely cooled, get the family involved and decorate your cookie cake tree!

Gluten-Free Christmas Tree Cookie Cake
  • Gluten-Free or Regular Refrigerated Chocolate Chip Cookie Dough OR Homemade Cookie Dough
  • Sprinkles
  • Red and Green Frosting
  • Christmas Tree Shaped Pan

Step-by-Step Instructions:

  1. Preheat the oven to 325 degrees F.
  2. Using a Christmas Tree Shaped Cake Pan, spray it with non-stick spray.
  3. Press the dough into the pan to create the tree shape.
  4. If you are using the premade cookies, we used 15 of the premade cookies to fit into the pan. The dough should be about 1/4 inch thick.
  5. Once fully pressed into the pan, bake at 325 degrees F for 12 minutes.
  6. Once the dough is lightly browned, remove it and let it rest and cool for 5-10 minutes.
  7. Carefully flip the pan over onto a cooling rack to release it from the pan.
  8. Cool completely before adding the frosting.
  9. When cooled, use the icing and sprinkles to your preference to create the decorated tree.

When we first started to make this Christmas Tree Cookie Cake, we always used Gluten-Free Immaculate Cookie Dough; however, we have since started using Sweet Loren’s or our own Homemade Chocolate Chip Dough.

If you are not gluten-free, use any type of refrigerated dough that you prefer, such as Pillsbury. The rolled cookie dough from Pillsbury works perfectly for this recipe.

  • Fully press the cookie dough into a greased cake pan. If you are using the refrigerated gluten-free cookie dough, we used about 15 cookies and pressed them together.
  • Use chilled cookie dough!
  • Fully cool the cake before adding the frosting and sprinkles.
  • The dough should be about 1/4 inch thick in the pan.
