Little Smokies are simply small cocktail sausages, they also have a turkey cocktail sausage too. Either variety will work for this recipe. They are also precooked, so be sure that the ones you choose are also pre-cooked.
Once you have your sausages, it’s time to prepare them, and then cook them in the smoker, low and slow.

These will be cooked at 250*F for 2-3 hours, enough to warm them all the way through and give them a great smokey flavor.

We use a pellet blend of a variety, but apple is a great choice for these too.

Tips for Making Pellet Grilled Little Smokies:
The only thing these sausages will be combined with is barbecue sauce, this can be store-bought or homemade.
We use this Homemade Barbecue Sauce to coat these.
I also think the Apple Habanero from Head Country is amazing on these too.
It’s best to use a cast iron skillet to place directly on the smoker or a disposable aluminum pan that is heavy-duty.
About every 30 minutes or so, stir up the smokies so they are evenly cooked on all sides and that’s all you have to do to make these!
These Smoked Little Smokies, pair well with a variety of other side dishes like Smoked Artichoke Dip.
They can also be used to make Air Fryer Pigs in a Blanket too! We like to use any leftovers to make these.

Preheat the smoker to 250*F.

Pour 1-2 cups of sauce over the smokies.

Place the skillet or pan on the smoker for 2-3 hours, the time will depend on the amount of smoky flavor that you prefer. Stir occasionally throughout the smoking time to distribute the sauce evenly.
