Tips for Making Pellet Grill Jerk Chicken:

Begin by preheating the pellet grill, or this can also be made on a traditional gas grill, to 450 degrees F.

While the grill is preheating, pat each chicken thigh dry and place in a large bowl or shallow dish.

Coat each chicken thigh with the seasonings, then add the cornstarch. The cornstarch can be easily spread with the back of a spoon to coat the chicken thigh or you can toss the chicken thighs in it as well. This coating will make the outside a bit more crisp.

Once you have the chicken coated, place it directly on the grill grates at 450 degrees F.

Let it cook on each side for 10-15 minutes or until the internal temperature reaches at least 165 degrees F.

It’s best to have olive oil spray or grapeseed oil spray because if it does get a little bit floury, you can give it a good coat of oil to crisp up the cornstarch.

What pellets should you use for this pellet grill recipe?

Cherry adds a great flavor to this chicken; however, we ultimately choose a blend almost every time.

The blend has a variety of flavors that enhance the chicken. Remember that whichever pellet flavor you choose, will enhance the final flavor of your food.

Once done, this chicken recipe is great served with Ninja Foodi Rice or your favorite grilled vegetables.
