This is a wonderful dish to add to your list of pellet grill recipes.

What do you need for Pellet Grill Chicken Breast?

This recipe will begin with a chicken marinade, so it’s best to prepare this in the morning and let the chicken sit in the refrigerator most of the day to soak in the marinade. The chicken should marinate for at least 2 hours, but it can be in the refrigerator for most of the day as well if needed until you are ready to grill.

The full instructions and recipe ingredients will be listed in the recipe card below.

This marinade will work with either chicken breast or chicken thighs and pairs well with Pellet Grill Baked Potatoes or Smoked Mac and Cheese.

What pellets should you use?

Any variety of pellets will work for this chicken breast but remember that the pellets will directly enhance the flavor of the chicken breast.

  • Applewood Pellets – Give it a mild, sweet flavor.
  • Hickory – Strong smoky flavor, this goes well with barbecue.
  • Cherry – Slightly sweet and smoky flavor.
  • Blend – Combination of flavors.

Our favorite is the blend of pellets, I like how all the flavors come together to enhance the chicken.

Tips for Making Chicken Breast on the Pellet Grill:

When making this chicken breast using the marinade, be sure to let it sit and marinate long enough, for at least 2 hours.

ALWAYS use either the probe that comes with your pellet grill or a meat thermometer to check the internal temperature of the meat before serving. This chicken must be at least 165 degrees F internally before it’s considered done.

Using a meat thermometer or probe allows you to get the right temperature without overcooking or undercooking.

Once the meat is removed from the grill, let it sit and rest for about 5 minutes before serving. This step is just as important as all of the others because it allows for the juices in the chicken to fully saturate and soak into the meat, which means that you will get a juicy and flavorful cut of chicken.

This pellet grilled chicken breast makes for a wonderful dinner paired with your favorite side dish or topped over a green leafy salad, it’s your choice. I’m certain you will enjoy the smoky flavor.
