We also use ribeye steaks when we make these, it’s simply our preference, but any cut will do.
What is bruschetta?
Bruschetta is a thick bread that is usually coated with some olive oil or garlic and then it’s topped with a wonderful mix of fresh tomatoes and seasoning.
It’s a great appetizer and really can be loved by all assuming you like tomatoes.

Today, we’re going to skip the bread and use steak with the bruschetta tomatoes topped over it.
It can be served on top of salad or greens too or even with these bruschetta burgers. There is a variety of serving options outside of simply using bread.
Should you use fresh ingredients for Grilled Bruschetta Steaks?
This dish should be made with fresh ingredients, plus it’s even better when it comes right out of your backyard garden.
If you do not have these in your garden, simply pick them up at a local farmer’s market or your local grocery store. These are going to be in peak season in the summer months, with great deals and easy to find.
Tips for Making Grilled Bruschetta Steaks:
- Always REST the steaks – Once seasoned, let the steaks rest before grilling. This allows the juices to flow and the steaks will be nice and tender.
- Top with Balsamic Dressing – If you want to add a little more zesty flavor, top the bruschetta with balsamic dressing.
- Use a Meat Thermometer – This is very important for getting the right doneness of the steaks. A medium-well steak has an internal temperature of about 155 degrees F, and a well-done steak will be 165 degrees F.
- Choose the BEST steak – USe the right cut of steak of grilling, the best options are a Ribeye, New York Strip, or Kansas City Strip. These all will grill nicely and pair well with the topping.

Season the steaks with your preferred seasonings, this could be salt and pepper or garlic and herb seasoning. Once seasoned let them rest for about 30 minutes.

Begin by grilling the steaks on medium heat about 450°F up until you reach your desired doneness, for medium-well this would be an internal temperature of 155°F.

While the steaks are grilling, combine the ingredients for the bruschetta in a small bowl. Mix them well to fully coat the tomatoes with the garlic and olive oil.

Once steaks are done, serve topped with bruschetta.
