These Frosted Cookie Triangles are easy to make gluten-free and are made with the Gluten-Free Simple Cookie Dough. This ONE dough can make multiple types of cookies such as these Cranberry Pistachio Cookies.

Making gluten-free cookies is as easy as swapping out the flour. To make cookies gluten-free, most of the time all you need to do is make sure to use gluten-free all-purpose flour. I almost always use Better Batter, but any 1:1 gluten-free flour will do.

Tips for Making Frosted Cookie Triangles:

Frosted Cookie Triangles are best made in a deep square baking pan, similar to the one linked above. This way the cookies come out thick and are easy to cut into triangles.

It’s very important to let the cookies harden before cutting into triangles, once the chocolate is spread over the entire pan of cookies, add the chopped nuts and then let it fully harden.

This just takes about 15 minutes, then you can cut them into triangles.

These are a fun addition to holiday cookies with a little bit different shape than the traditional cookies.

Variations of Frosted Cookie Triangles:

If you prefer to use something other than nuts, these are wonderful with chopped candy canes on top too. It makes them Peppermint Mocha Cookies, which are delicious too.

They can also be topped with sprinkles instead of nuts too, there are a variety of toppings you can add to the chocolate from caramel to sprinkles…get creative!

    Preheat oven to 350*F.

    Line a square baking pan with parchment paper.

    Press the cookie dough evenly into the plan.

    Bake for 20-25 minutes until a toothpick inserted comes out clean.

    Carefully remove and cool completely on a wire rack, leave it on the parchment paper.

    Chop nuts and set aside.

    Melt chocolate chips in a microwave-safe bowl.

    Pour chocolate over cookie bars and spread with a spatula.

    Immediately add chopped nuts.

    Let harden 15 minutes.

    Cut into triangles.

    Store in an airtight container.
