Tips for the Best Fried Green Tomatoes:

  • Use firm tomatoes, soft tomatoes will not hold their shape. Be sure they are firm and not yet ripe.
  • Juicy tomatoes should allow the cornmeal to stick.
  • Cook in batches – do not overcrowd the pan, or they will become soggy.
  • Watch them closely – As the oil continues to heat throughout batches, they will begin to cook faster, always be sure to watch them closely.
  • Use just enough oil – Use just enough oil to coat the pan and cover the tomatoes, do not use too much oil or it’ll get messy real quick!
  • Don’t peel the tomatoes – the skin will help them hold their shape.
