Blueberry Crumb Cobbler

There is nothing better during the summer than a delicious Blueberry Crumb Cobbler fresh out of the oven with vanilla ice cream. I’m sharing a delicious recipe today that was sponsored by Fresh From Florida as part of Influencer Activation for Influence Central.
In the times before kids, that I can barely remember, my husband and I used to go out on Friday nights and really all weekend. We weren’t clubbing people, just the thought of us in a club makes me laugh hysterically. We were more of dinner and movie people, or we loved going and getting things to work on projects at our home.
I guess really nothing has changed except now we do dinner and movie nights at home most weekends. One thing I really love this time of year is that on Friday nights, we usually end up grilling outdoors and soaking in the fresh air. It’s just so relaxing, our kids play and wear themselves out while we enjoy dinner on the patio.
One thing that I love to do is make a dessert on Friday nights. We rarely actually have dessert after dinner, so it’s always a nice treat. A few years ago I shared my Peach Crumb Cobbler, but I thought I would mix it up this time with Blueberry Crumb Cobbler.
The blueberries I used were Fresh From Florida and the Florida Department of Agriculture, which promotes locally grown Florida produce and seafood. The Fresh From Florida brand features blueberries, tomatoes, sweet corn, watermelon, and seafood. They really do have some unbelievable seafood. I will never forget the salmon I had when we were visiting Florida. It was scrumptious!
This cobbler is one of my favorites because it’s very few ingredients, you will have them all in your kitchen pantry and it’s not heavy. It’s so light and delicious. This recipe came from my great great aunt’s cookbooks and notes, I can imagine her on a hot summer day, in the kitchen with the windows open making this for dinner. I can even see her standing there with her apron on, brings back so many memories. I can’t even imagine though how hot it must have been back all those years ago when she was making these before there was air conditioning in Oklahoma. We’ve been in the 120’s before, can you imagine? No way to cool down? Sometimes in the summer, I can’t even leave the house because just walking outside feels suffocating, now to have no relief just amazes me.
One thing my husband prefers we have all the time in the summer are blueberries. We use them in just about everything. I knew that this past weekend he would really enjoy this cobbler. We had it after a night of grilling steaks, corn on the cob, and more. It was a nice calm moment after weeks of being busy and constantly going.

Preheat the oven to 350*.

Cream together the butter and sugar.

Add in the flour, baking powder, and salt until sifted well.

Add in the beaten egg and continue creaming together until it becomes a crumb mixture.

Spray a 9 inch round pan or an oblong pan with non stick cooking spray.

Place the blueberries evenly on the bottom of the pan.

Top the blueberries evenly with the crumb mixture.

Bake for 30-40 minutes or until the crumb top slightly browns.

Serve warm with vanilla ice cream.
