Turkey Noodle Casserole

As we head into the holidays, we will likely have lots of leftover turkey, perfect for this Turkey Noodle Casserole!
It’s November! What does this mean? Thanksgiving is almost here! Now is anyone else still trying to figure out how we are nearly to the end of the year? I mean I don’t even know that I’ve fully grasp it’s 2016 and now we are about to be in a new year. It’s truly amazing how fast time goes, it’s nearing the time of endless amounts of turkey. I’ll admit too, I’m more of a ham on Thanksgiving person myself, honestly I’d be fine skipping the turkey. That’s not true though for many, so I thought this would be a great dish to share for all the leftover turkey.
The day after Thanksgiving is usually a relaxing day for us, I’m not a big Black Friday shopper or at least at the store, I do a little shopping online but I don’t leave my house! There is one particular part in our town where the mall and most of the stores are and I avoid that like the plague…I like to stay in my little slice of country. This Black Friday though…Gilmore Girls. Yes, I said it, that’s what I’ll be doing. If everything goes dark on my site that day, just know I’m tucked away watching Gilmore Girls. My husband is just as excited as me too, he’s a fan boy. Is that the right, term?
He mentioned to me the other day that a co-worker ask him something about The Walking Dead show, and he had to admit that he has never seen it and we really don’t watch it. He told me in his mind all he was thinking is…”I don’t know anything about that show, but I do know I’m counting down to the Gilmore Girls.” He said then he realized just how sad of a man he is…HA! I love it though, it’s nice when you both like the same shows! At least he will admit that he does in fact love Gilmore Girls possibly as much as his wife.
So, back to this casserole. This is perfect for leftover turkey and honestly I may be too busy watching my show to cook this the day after Thanksgiving, but I will use that leftover turkey for it at some point. I love that you can even add the leftover corn or peas from your dinner too. All you do is mix those foods together along with cooked noodles and a can of cream of mushroom or cream of chicken. Then, I top it with bread crumbs and bake it up in the oven. It’s delicious and so easy to make.

Begin by preheating the oven to 350*.

Prepare the noodles as instructed on the package. Once the noodles are cooked and drained return them to the bowl and mix in the remaining ingredients.

Once well mixed pour into a greased 9x13 baking dish and sprinkle the top with bread crumbs. This will bake for about 15 minutes until the bread crumbs are slightly browned.

Preheat the oven to 350*.

Mix together the pasta, turkey, corn, peas, and can of cream soup.

Spray a 9x13 baking dish with non-stick cooking spray, then evenly spread the pasta mixture in it.

Top with the bread crumbs.

Bake for 20 minutes.

Remove and serve.
