If you only have Russet Potatoes on hand, you can use those as well; however, note that the texture will differ from what you see in these images.

Tips for Making Roasted Potatoes in the Slow Cooker:

The potatoes will cook on HIGH for 3 hours; however, stirring them up after about 90 minutes is important in the slow cooker. This will allow you to avoid any burning on the bottom of the slow cooker.

While it’s important to stir them, it’s also important not to over-stir them or they will not get crispy. One or two stirs is all it takes to avoid them burning on the bottom and allow them to get nice and crispy.
