Fajitas are one of my favorite meals, we love to make them in either the Air Fryer or Slow Cooker. Today I’m going to share all about making these in the Slow Cooker or Crockpot! Whether you need a quick summer dinner that won’t heat up the house or a reliable meal-prep solution for a busy school week, this crockpot recipe delivers tender, juicy chicken and perfectly seasoned vegetables every single time.

Step-by-Step Instructions:

  1. Spray or line a 6-quart slow cooker with non-stick spray or lining.
  2. Place the vegetables on the bottom of the slow cooker.
  3. Top evenly with the chicken.
  4. Sprinkle evenly with the seasoning.
  5. Cover and Cook on low for at least 6 hours up to 8 hours. The internal temperature of the chicken should be at least 165 degrees F before serving.
  6. Shred the chicken with a fork before serving.

These are going to cook all day, then simply shred them and add them right into a corn tortilla or in a burrito. This meat is also great on a rice bowl or lettuce too.

We make this recipe with boneless, skinless chicken thighs; however, you can also use chicken breast too. We have found though chicken thighs tend to be juicier and do not dry out like chicken breast tends to. I highly suggest chicken thighs over chicken breast.

  • The Shredding Secret: Once the chicken is done, shred it directly in the slow cooker and let it sit in the juices for about 10 minutes before serving. This allows the meat to soak up all that incredible taco flavor.
  • Add a Zest: A fresh squeeze of lime juice right before serving cuts through the richness of the chicken and makes the flavors pop.
  • Ninja Foodi Method: You can also make these in the Ninja Foodi using the slow cooker function (set the vent to ‘vent’) or the pressure cooker function on the Ninja Hyperheat for 10 minutes (add 1/2 cup water for pressure).

Freezer Chicken Fajitas Recipe Instructions:

To prep these chicken fajitas as a freezer meal, simply add the raw chicken thighs, sliced bell peppers, and onions into a heavy-duty, gallon-sized freezer bag. Sprinkle the taco seasoning over the ingredients. Squeeze out as much air as possible to prevent freezer burn, seal it tightly, and label the bag. Freeze flat for up to 3 months.

When you’re ready to cook, thaw the freezer bag completely in the refrigerator overnight. On cooking day, dump the entire contents of the bag into your 6-quart slow cooker.

Cover and cook on low for 6–8 hours until the chicken is tender and easy to shred, following the recipe card instructions.

Can you put raw chicken in the slow cooker?

Raw chicken can be put in the slow cooker and cooked on low for 6-8 hours. It needs to reach an internal temperature of at least 165 degrees F.

This can be checked with a meat thermometer.
