- Gluten-Free or Regular Graham Cracker Pie Crust
- Fresh Strawberries
- Water
- Granulated Sugar
- Lemon Juice
- Cornstarch
- Heavy Whipping Cream
- Sweetened Condsend Milk
- Cream Cheese
- Vanilla Extract
What pie crust should you use for this recipe?
If you need this recipe to be made gluten-free, use a Gluten-Free Graham Cracker Pie Crust similar to these Mi-Del Pie Crust.
If you prefer to make yours from scratch, you can also make this Homemade Gluten-Free Graham Cracker Pie Crust.
If you do not need gluten-free, simply choose the graham cracker pie crust of your choice.
If you use a 10-inch pie crust, then you will have the perfect amount of filling. If you are using a 9-inch pie crust, there may be extra filling leftover.
This extra filling can be placed in a silicone mold and frozen in the freezer. Then, it can be reused with strawberry shortcake, vanilla ice cream, or paired with cookies to serve as a frozen treat.
Quick tip regarding the pie crust:
If you want perfectly cut slices instead of more crumbly, preheat the oven to 325 degrees F and heat the pie shell for 5 minutes before adding the filling.
This will allow the crust to harden a bit more before being filled with the strawberry filling. This step is completely optional, the pie will taste just as fabulous as no-bake too!
Can you use frozen strawberries?
It is best to use fresh strawberries for this recipe that will be chopped before adding to the filling. When using frozen strawberries it will create too much liquid and change the texture of the pie.

To Make Strawberry Sauce:

In a large saucepan, add the chopped strawberries, 1/3 cup water, granulated sugar, and lemon juice.

Place over medium heat and stir until mixture comes to a boil for approximately 5 minutes.

In a small bowl, add the cornstarch and hot water to make a slurry. Set aside.

Once the mixture is boiling, stir in the cornstarch slurry. Mix and cook for about 2 minutes or until the sauce thickens to your liking.

To Make the Filling:

In a separate bowl, whip the cream to a stiff peak and set aside.
