Ingredient Notes

  • Cream Cheese – Acts as the rich, velvety base for your garlic white sauce. It replaces heavy cream and adds a tangy depth while clinging to the noodles.
  • Milk – Thins out the cream cheese to create the pourable sauce.
  • Garlic Salt – Infuses flavor into the sauce and the spinach layer in one quick step.
  • Cooked and Shredded Chicken – Provides lean, juicy protein that absorbs the garlic cream sauce.
  • Crushed Garlic – Adds a sharp, aromatic garlic kick that cuts through the rich cream and cottage cheese.
  • Olive Oil – Used to wilt the fresh spinach without burning while addin ga subtle flavor.
  • Fresh Spinach – Brings a pop of fresh color and flavor, plus extra nutrients into the garlic chicken lasagna.
  • Gluten-Free Oven-Ready Lasagna Noodles – Eliminates the need to boil water, cutting down on the prep time and messy cleanup.
  • Mozzarella Cheese – Essential for classic, gooey cheese-pull. It seals in the layers and forms the golden top crust when baked.
  • Cottage Cheese – A lighter, protein-packed alternative to traditional ricotta. It bakes up amazingly soft and creamy while keeping the dish from feeling too heavy.
  • Grated Parmesan Cheese – Brings a sharp, salty, nutty bite that elevates the cream sauce.

How to Make Gluten-Free Garlic Chicken Lasagna

  1. Preheat oven to 425°F.
  2. Prepare the white sauce using a medium-sized saucepan on medium-high heat; add the block of cream cheese, milk, and garlic salt. Warm this up until it’s fully melted and smooth. If the sauce is too thick, add additional milk. It will be thicker than a marinara sauce, more spreadable.
  3. Using a large skillet on medium-high heat, add in the olive oil and garlic clove, cooked chicken, and fresh spinach. Let this simmer for about 2 minutes until the spinach is wilted.
  4. Spray a 9×13 baking dish with nonstick spray. Spread 1/3 of the white sauce on the bottom of the pan and place 3 noodles on top of the white sauce.
  5. Add 1/3 of the chicken mixture, 1/3 of the cottage cheese, mozzarella cheese, and parmesan cheese. (Be sure to split each item into 3rds for 3 layers.)
  6. Top with 3 more lasagna noodles and repeat.
  7. On the last layer, add the 3 noodles, and then the remaining chicken mixture. Then, add 3 more noodles and top the noodles with the remaining sauce and cheese.
  8. Cover the lasagna with aluminum foil.
  9. Bake at 425°F covered with foil for 25 minutes. If any lasagna noodles are not fully covered with liquid or look uncooked, lightly press them down.
  10. Carefully uncover and cook for an additional 5 minutes on LOW BROIL. This will crisp the top of the lasagna.
  11. Let rest for 10 minutes before serving.

Frequently Asked Questions

What lasagna noodles should you use for gluten-free lasagna?

This creamy chicken lasagna recipe is made with Gluten-Free Barilla Oven-Ready Lasagna. This is easily found at your local grocery store; we find it often at Target or Walmart.

Other brands can be used; however, the instructions for this recipe are written for oven-ready pasta. If yours is not oven-ready, the recipe will need to be altered.

Can you use cottage cheese instead of ricotta?

Traditionally, lasagna includes a layer of Ricotta cheese; the Ricotta mixture can be replaced with Cottage Cheese.

This is what we do in this recipe; low-calorie cottage cheese can also be used. This is completely up to you and your preference.

Should I double the sauce?

We make this recipe as written; however, many reviewers have mentioned they doubled the sauce for an even creamier sauce, which is not a bad idea either!

Can I freeze this recipe before baking?

Wrap the assembled (baked or unbaked) dish tightly in plastic wrap and foil, then freeze up to 3 months. Thaw completely in the fridge overnight before baking as directed.

Tips for Making Gluten-Free Garlic Chicken Lasagna

  • Once the foil is removed, if you see any noodles not covered by the liquid, lightly press them into the liquid.
  • This recipe uses oven-ready pasta that does not require boiling.
  • Let it rest before slicing for about 10 to 15 minutes for the sauce to thicken.
  • Use freshly grated cheeses; the pre-shredded cheeses do not melt as well.
  • We like to broil the top to get golden brown, but you can just bake it a few minutes longer instead if preferred.

Variations and Substitutions

  • Swap the spinach for kale if you are out of spinach.
  • Add in a little bit of Frank’s RedHot Sauce into the shredded chicken for a buffalo garlic twist.
  • Add in sliced mushrooms and zucchini with the spinach before adding it into the lasagna.
  • If you do not need gluten-free, just use oven-ready lasagna noodles.
