Gluten-Free Sheet Pan Fajitas are a go-to on a busy weeknight, these are easy to prepare with a prep time of 5 minutes with only a 20-minute cooking time. These fajitas are wonderful served in warm tortillas garnished with lime and cilantro.
This is the best toss it on the pan and bake type of dinner, making it very hands-off for you. It can even be prepped in advance in a Ziploc bag and stored in the refrigerator until you are ready to add it to the sheet pan.
What ingredients do you need for Gluten Free Sheet Pan Fajitas?
- Boneless, Skinless Chicken Thighs
- Bell Peppers (Red Bell Pepper, Green Bell Pepper, Orange Bell Pepper
- White Onions or Sweet Onions
- Taco Seasoning
- Olive Oil or Avocado Oil
- Warm Corn Tortillas or Flour Tortillas
- Fresh Cilantro to Garnish
- Fresh Lime Juice to Garnish
- Serving with Sour Cream, Salsa, Guacamole, Black Beans
This recipe is naturally gluten-free as long as you use gluten-free flour tortillas or corn tortillas. We almost always use corn tortillas, when using corn tortillas make sure to heat them first so they are more pliable and do not tear.
If you want to make these low-carb serve with a salad, grain free tortillas, or in lettuce wraps.
Tips for Making Sheet Pan Fajitas:
It is best to use a large mixing bowl and combine the ingredients into the bowl, then add olive oil and taco seasoning to mix or stir the ingredients together. This can also be done in a Ziploc bag, where the bag is sealed nd the ingredients are shaken together to fully coat with seasoning.
Once the ingredients are fully mixed, pour them out on a prepared sheet pan or baking sheet. This will then be baked in a preheated oven at 400 degrees F for 20 minute so or until the chicken reaches and internal temperature of at least 165 degrees F. This can easily be checked with a meat thermometer.
Once the cooking time is complete, serve the fajitas in a warm tortilla.
Do you have to use chicken thighs?
Chicken Thighs are preferred as they do not dry out and are juicy; however, you can also use chicken breasts or chicken tenders. The chicken thighs will be cut into strips.
Alternative Protein Optionals for Sheet Pan Fajitas:
We prefer to use chicken for this, but you can also make these shrimp fajitas or add shrimp to this when baking to make it a combination of shrimp and chicken.
Steak can also be used to create steak fajitas, it’s completely up to you!
How long can you store Gluten Free Sheet Pan Fajitas?
Once fully cooled, store leftover fajitas in an airtight container in the fridge for up to 4 days. When ready to reheat, heat them in the microwave for 1-2 minutes on a microwave-safe plate. Alternatively, they can also be heated in the air fryer at 330 degrees F for 4-5 minutes.
