This creamy tomato Florentine soup is the perfect lunch or dinner soup to pair with a toasty grilled cheese. It’s packed with tomatoes, fresh spinach, and herbs, and is so good it will warm you right up. This is a classic tomato-based soup, but with spinach and herbs, it has a wonderful flavor.

One of my favorite memories of college is going to the nearby cafe for tomato soup and grilled cheese on cold days. I remember taking a break in between classes, heading to that cafe to do homework, and enjoying their delicious soup and sandwiches.

Step-by-Step Instructions:

  1. In a large stockpot, place the onion and butter and saute them over medium heat, adding in the garlic. Let this simmer for about 5 minutes.
  2. Add in the chicken broth, crushed tomatoes, ketchup, vegetable juice, basil, dill, hot pepper sauce, sugar, pepper, and wine.
  3. Let this simmer and cook for about 15 minutes.
  4. While this is simmering, melt the butter and whisk in the flour over medium heat or in the microwave.
  5. Whisk this mixture into the stockpot and let the soup simmer for about 30 minutes.
  6. Whisk in or mix in the half and half, then add in the spinach. Stir this well to combine.
  7. Let this warm and simmer for about 5 minutes.

This Dutch oven is the best choice for making Creamy Tomato Florentine Soup. It allows you to make the entire soup right there in the Dutch oven on the stove.

The creamy part is made with the cream, of course. I use half and half for this recipe; however, you can also use heavy cream.

I would recommend using full cream or half and half to get the best taste and texture.

This recipe can be made gluten-free with a simple switch of flour with gluten-free all-purpose flour.

I use Better Batter Gluten-Free All-Purpose Flour, King Arthur, Bob’s Red Mill, or Cup 4 Cup. Be sure that whichever flour you choose, it’s an even ratio to regular all-purpose flour.

Let the soup sit for about 5 minutes after it’s cooked to thicken up a bit. It’s supposed to be a thicker tomato soup.

If you want extra protein, add Italian Sausage or Shredded Chicken.
