Cooking Light: Leftover Turkey Recipes

Most of us finished up our Thanksgiving celebrations over the weekend, now it’s time to figure out what to do with all that leftover turkey? Let’s face it after 2-3 days of turkey and gravy, most of us could use a little turkey recreation!

I recently found several great Turkey Recipe ideas over on Cooking Light. One that immediately caught my eye was the Mexican Stew, how delicious does that sound?
