Cheesy Potato Casserole with Ore-Ida

Guess what holiday is just about to sneak up on us? Easter! Of course, last year we were already celebrating Easter. I happen to love though that it is much later, which hopefully means the weather is warmer and perfect for open toe shoes, spring dresses, and egg hunts.
Many will enjoy Easter this year with an Easter Brunch and if that is you, I have the perfect recipe for you to share with your family and friends.
This year, I added a little something extra to the season by making multiple batches of this Cheesy Potato Casserole with Ore-Ida Shredded Hash Brown Potatoes to share with my grandma and her friends.
My grandma is the one in our family that cooked.
Her food was amazing, and she loved to cook. I remember spending hours with her in the kitchen making candies, soups, casseroles, and treats that we would load up and take to family and friends. She always had a heart for making sure everyone was fed and even more importantly fed really good food.
I’ve shared many of her recipes here on this blog; however, as she has gotten older she now lives in a retirement home. She’s one of the queens of the retirement home and involved in all sorts of activities.
Sometimes I think she has a more busy life than I do! I call her and she is never in her apartment, she’s either at bingo or watching a movie, always on the go!
One thing she doesn’t get to do much of anymore is cook. She does have a small kitchen but it just isn’t setup really for her to cook.
She’s always asking me to make her different things that she misses from years ago, so this year I thought I would make a few batches of Cheesy Potato Casserole for her to share with her friends at the retirement home.
My first stop on this cooking adventure was Walmart to pick up the Ore-Ida Shredded Hash Brown Potatoes, then it was time to cook.
How do you make Cheesy Potato Casserole?
This casserole is simple to make and even better you can double or triple the recipe! I decided to triple the recipe, then I also made one batch with a gluten free cream of chicken and cereal so that I could enjoy it too. This recipe is perfect to batch cook and freeze as well. If you do decide to freeze it simply warm it up in the oven on 350* once you are ready to serve it.
The batch I made for my family was gone within the same day! My dad came over and enjoyed some too.
I decided to make the two batches for my grandma in disposable dishes that are also easy to cook the casserole in too, plus warm up the casserole later since they would be eating them the following day.
Next stop, Grandma’s! Of course, as soon as we stopped in she was headed out to go shopping. Remember, I told you she is a busy woman, right?
She was ecstatic though to see us stop by and to share a dish made by her granddaughter with her friends at her retirement home. I was also pretty excited to share it too.
I know my grandma is very proud of me and it just makes my heart happy to give her something I made and know she is enjoying it. I still remember those days in her kitchen like they were yesterday and eating all her yummy food!

1. Preheat oven to 350°F. Coat 13x9 baking dish with nonstick cooking spray.

2. In a large bowl, whisk together soup, sour cream, salt and pepper. Stir in cheese, onion and hash browns until well mixed. Spoon evenly into baking dish.

3. In a medium bowl, mix together cereal and butter. Sprinkle evenly on top of hash brown mixture.

4. Bake uncovered for 45 to 50 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving. Season with additional salt and pepper to taste if desired. Garnish with additional sliced green onion if desired.
