Blackberry Vinaigrette Dressing

When I think spring and summer, fresh salads are always at the top of my list for lunch and dinner. Today, I’m sharing a Blackberry Vinaigrette Dressing recipe in partnership with The Produce Gathering, all thoughts and opinions are my own. There are affiliate links used in this post.
This past week at The Produce Gathering, we picked up a carton of blackberries and then we also always get fresh lettuce too. I saw those blackberries and of course I had cobbler drifting through my mind, but I am trying to eat healthy. That means my cobbler may have to sit tight for a bit. In the meantime though, what about a delicious dressing? I decided to make a Blackberry Vinaigrette Dressing to serve over the fresh lettuce. I paired it with other produce we received at the sale too for a delicious summer salad.
This vinaigrette is very simple and can be adapted to the fruit you have on hand, like strawberries or raspberries. The biggest thing that is a must have for this recipe is a mesh strainer, find it here. This is what I use to push the blackberries through so that the juice comes out but all the seeds are left in the strainer. This can be used with all of the fruit to avoid lots of seeds.
I’ve just started to make my own dressing recipes lately, as I’ve found that they are simple to make with ingredients straight from the pantry. It’s always nice to enjoy salads that are topped with homemade dressing, that way you know exactly what went into the dressing too.
This salad is delicious with the fresh lettuce, strawberries, blackberries, mandarin oranges, and then topped with the Blackberry Vinaigrette Dressing. I think a great addition would be adding in pecans to this too. Sadly, I’m allergic to pecans or they would be on this too.

Place the blackberries and 1/2 Cup water in a small sauce pan, warm up until the blackberries are softened.

Use a fine mesh strainer over a mixing bowl, then place the softened blackberries into the strainer and use a spatula to smash them down. Do this until all the juice is into the bowl and the seeds are left in the strainer.

Combine the juice from the blackberries with the vinegar, juice from 1/2 a lemon, sugar, olive oil, and garlic salt.

Whisk this well then serve over fresh salad.
