As we head along into spring that means that in our family light and delicious fruit starts to appear in almost ALL recipes. From dinners to dessert, it’s a must have! Lemonade? That is almost ALWAYS in our fridge all spring and summer long!

My husband and son started making their own orange juice a few weeks ago, which led to my husband requesting LOTS of oranges so that they can continue making fresh squeezed orange juice. I can’t blame them though, it’s so delicious. I also love seeing them work together in the kitchen, it makes this mommy’s heart happy. I’m planning to get them some blood oranges though so they can make blood orange juice, which just sounds amazing!

This dish is perfect for a brunch or a book club! Do you host book club? I have to say it’s crossed my mind many times especially once both my kids are in school.
