Emeril’s Wok-Seared Duck Salad Recipe
Ingredients
- 2 tablespoons uncooked jasmine rice
- 1 tablespoon minced fresh red Thai bird chile
- 2 magret duck breasts about 12 ounces each or 1 ½ pounds other domestic duck breasts
- 1/3 cup minced shallot
- 1 ½ tablespoons peeled and minced fresh ginger
- ¼ cup fish sauce see page 213 for more details or typical Asian market brands
- ¼ cup freshly squeezed lime juice
- ¼ cup freshly squeezed orange juice
- 1 ½ teaspoons palm sugar or light brown sugar
- ½ cup fresh cilantro leaves
- ½ cup fresh mint leaves
- ½ cup fresh basil leaves
- 1 medium head of red leaf lettuce washed and torn into bite-sized pieces
- 2 cups bean sprouts
- 1 cup julienned red bell pepper
Instructions
-
1. Heat a wok over medium-high heat and add the jasmine rice. Toast the rice, shaking the wok constantly, until all the grains have turned golden brown and fragrant, approximately 3 to 4 minutes. This process develops a wonderfully nutty aroma. Carefully transfer the toasted rice to a mortar and set aside to cool completely. Once cooled, use a pestle to grind the rice until it reaches a sandy consistency. If you prefer, a clean spice grinder can achieve the same result. Place the ground rice in a large mixing bowl, ready for later use.
-
2. Next, place the minced red Thai bird chile in the same wok over medium-high heat. Cook the chile, shaking the wok frequently, just until it becomes lightly colored and releases its potent, spicy fragrance, about 30 to 60 seconds. Be careful not to burn it. Promptly remove the chile from the pan and add it to the bowl containing the ground rice.
-
3. Prepare the duck breasts by using a sharp paring knife to score the fatty side in a shallow diamond pattern. This crucial step helps the fat render more efficiently, resulting in wonderfully crispy skin. Place the duck breasts, fatty side down, into the preheated wok and cook over medium heat. Continue cooking until the skin achieves a beautiful golden-brown color and a satisfying crisp texture, typically 4 to 5 minutes. Transfer the perfectly seared duck breasts to a cutting board, slice them into thin, elegant strips, and then return these strips to the wok. Add the minced shallot and fresh ginger to the wok with the duck. Stir-fry over medium-high heat, ensuring the duck is just cooked through and infused with the aromatic flavors, which should take about 2 minutes. Once cooked, transfer the duck mixture from the wok to the bowl with the rice and chile, and set aside.
-
4. In a separate small bowl, meticulously combine the fish sauce, freshly squeezed lime juice, orange juice, and palm sugar (or light brown sugar). Whisk these ingredients together until they are thoroughly blended and the sugar has dissolved, creating a balanced and zesty dressing. Pour this exquisite mixture over the duck, rice, and chile in the large mixing bowl, tossing gently until every piece is evenly coated. Finally, add the fresh cilantro, mint, basil, red leaf lettuce (torn into bite-sized pieces), crunchy bean sprouts, and vibrant julienned red bell pepper. Toss all ingredients together one last time to ensure they are well combined, creating a harmonious blend of flavors and textures.
-
5. This Wok-Seared Duck Salad is best enjoyed immediately to savor its optimal freshness and crispness. Serve promptly as a light yet satisfying main course or an impressive appetizer.

The Wok-Seared Duck Salad: A Culinary Adventure
I must admit, upon first encountering the title and ingredient list for “Wok-Seared Duck Salad,” a slight feeling of intimidation crept in. Duck often feels like a restaurant-only delicacy, and the array of fresh Asian-inspired ingredients might seem daunting to some. However, this is precisely why being part of this Emeril cooking party is such a rewarding challenge for me. It pushes me to venture beyond my usual comfort zone and explore dishes I might otherwise overlook. And I’m so glad I did!
Upon closer inspection of the recipe, and many others within “Emeril’s Sizzling Skillets,” I discovered a comforting truth: a significant portion of the ingredients consists of common spices and seasonings that many home kitchens already stock. While there might be a few specialized items like magret duck breasts, fresh Thai bird chiles, or fish sauce, these are increasingly accessible in most well-stocked grocery stores or Asian markets. The beauty lies in how Emeril masterfully combines these elements to create a dish that tastes complex yet is surprisingly straightforward to prepare.
Pre-Cooking Insights: Ingredients and Preparation
Before diving into the cooking process, let’s appreciate the thoughtful selection of ingredients. The jasmine rice, toasted to a golden hue, adds a unique nutty depth and a delightful textural contrast to the salad. This isn’t just a garnish; it’s an integral component that grounds the dish. The Thai bird chile introduces a bright, fresh heat that awakens the palate, while the shallots and ginger provide an aromatic foundation, perfectly complementing the rich duck.
Magret duck breasts, known for their substantial layer of fat and rich flavor, are ideal for searing, yielding incredibly crispy skin and tender, succulent meat. For those unable to find magret, other domestic duck breasts or even a substitution with chicken or pork tenderloin (though the flavor profile will shift) could work in a pinch. The dressing, a harmonious blend of fish sauce, lime juice, orange juice, and palm sugar, is where the magic truly happens. Fish sauce provides the essential umami, lime juice offers a tangy brightness, orange juice a subtle sweetness and aromatic lift, and palm sugar (or light brown sugar) balances the acidity, creating a dressing that is both vibrant and addictive. Fresh cilantro, mint, and basil are not just garnishes; they are critical flavor elements, adding layers of herbaceous freshness that cut through the richness of the duck. Combined with crisp red leaf lettuce, crunchy bean sprouts, and sweet julienned red bell pepper, the salad becomes a symphony of tastes and textures.
The Wok Experience: Searing, Stir-Frying, and Assembling
The wok is the star of this recipe, showcasing its ability to handle high heat for toasting and searing, then quickly transitioning to stir-frying. The initial step of toasting jasmine rice until golden brown releases an intoxicating aroma that fills the kitchen, a promise of the deliciousness to come. Grinding it to a sandy texture creates a unique powder that adheres to the other ingredients, imparting flavor and a delicate crunch.
Searing the duck breasts, fatty side down, is an art form. The scoring allows the fat to render beautifully, creating that coveted crispy skin that contrasts so wonderfully with the tender meat. Watching the skin transform from pale to a rich golden brown is a satisfying part of the process. Once sliced and returned to the wok with shallots and ginger, the duck is quickly stir-fried, absorbing the aromatics without overcooking. The key is to achieve a perfectly cooked duck that remains juicy and flavorful.
Finally, assembling the salad involves combining the seared duck, toasted rice, and chilies with the lively dressing and an abundance of fresh herbs and vegetables. Each toss brings together a medley of colors, textures, and aromas. The process is quick and efficient, proving that gourmet flavors don’t always require hours in the kitchen. This Wok-Seared Duck Salad is not merely a meal; it’s an experience that tantalizes all the senses, from the sizzling sound of the wok to the vibrant colors on the plate and the explosive flavors with every bite.
Beyond the Recipe: Embracing Culinary Exploration
This Wok-Seared Duck Salad is more than just a recipe; it’s an invitation to explore new culinary territories and challenge your cooking skills. Emeril’s guidance makes what initially seems complex, entirely achievable. The combination of succulent duck, aromatic rice powder, zesty dressing, and crisp vegetables creates a dish that is both refreshing and deeply satisfying. It’s a perfect example of how a “one-pot wonder” can deliver extraordinary flavors with relative ease.
