Jalapeño Bacon Wrapped Deviled Eggs

Ingredients

  • 6 Hard Boiled Eggs
  • 1/4 Cup Fat Free Miracle Whip or Mayo Possibly more based on size of eggs
  • 2 Jalapeño Peppers Sliced (remove seeds for less heat)
  • 12 Pieces of Cooked Bacon (cooked until pliable, not crispy)
  • Paprika (for garnish)
  • Toothpicks

Instructions

  • Cut the hard-boiled eggs in half lengthwise. Carefully remove the yolks and place them into a small bowl.
  • Mash the yolks with a fork until smooth. Mix in the Miracle Whip (or mayonnaise) until the mixture is creamy and well combined. Adjust amount to desired consistency.
  • Spoon or pipe a generous amount of the yolk mixture back into each egg white half. Sprinkle a dash of paprika over the top of each filled egg.
  • Take one slice of cooked bacon and carefully wrap it around the filled egg half. Top the bacon-wrapped egg with a slice of jalapeño. Secure the bacon and jalapeño to the egg by inserting a toothpick through the jalapeño.
