- 1/4 Cup Sweet Onion (Diced)
- 1 3/4 Cups Water (divided)
- 3/4 Cup White Sugar
- 1/2 Cup Distilled White Vinegar
- 2 Tbsp Gluten-Free Soy Sauce
- 1 Tbsp Ketchup
- 1/4 Cup Cornstarch
- 2 Cups Cooked Rice (for serving)
Instructions
- Begin by cutting the chicken into small, uniform cubes. Set aside.
- Heat the olive oil in a large cast iron skillet or wok over medium-high heat. Add the crushed garlic and sauté for approximately 30 seconds until fragrant.
- Add the cubed chicken to the skillet and cook until it is well done and lightly browned on all sides, usually about 5-7 minutes. Remove the cooked chicken from the skillet and set it aside.
- While the chicken is cooking, prepare the sweet and sour sauce in a medium-sized saucepan. Combine the pineapple chunks (along with their reserved juice), diced green pepper, diced sweet onion, 1 1/2 cups of water, white sugar, and distilled white vinegar. Whisk these ingredients thoroughly until well combined.
- Stir in the gluten-free soy sauce and ketchup into the saucepan. Bring the mixture to a boil over medium-high heat, whisking occasionally to ensure everything is well incorporated.
- In a separate small bowl, whisk together the remaining 1/4 cup of water with the cornstarch to create a smooth slurry.
