Smoky Pellet Grill Buffalo Wings

Elevate Your Meal: Irresistible Grilled Buffalo Wings on Any Grill!

Get ready to transform your ordinary chicken wings into an extraordinary culinary experience with these mouthwatering Grilled Buffalo Wings. While Easy Grilled Chicken Wings are a fantastic start, infusing them with the zesty, spicy kick of buffalo sauce and the smoky allure of the grill takes them to a whole new level. This recipe is designed to deliver wings that are crispy on the outside, tender and juicy on the inside, bursting with flavor, and perfect for any gathering.

Whether you’re a seasoned grill master or just starting out, the unique qualities of a pellet grill or even a charcoal grill will impart a wonderful depth of smoky flavor that simply cannot be achieved through other cooking methods. The slow, even heat of a pellet grill, like a Traeger or Green Mountain, allows the smoke to penetrate the meat, creating a robust, savory base before the classic buffalo sauce is applied. For those who prefer the authentic char and intense heat, a charcoal grill offers a distinct, rustic smokiness that truly enhances the wings.

This recipe thoughtfully adapts the beloved flavors of Ninja Foodi Buffalo Wings, bringing them outdoors to the grill. The result is a fusion of classic buffalo zest with an unparalleled grilled essence. The flexibility to use either a pellet or charcoal grill means you can choose your preferred method for achieving perfectly cooked, flavorful wings every time.

While grilling offers a distinct smoky profile, these wings are incredibly versatile. If you’re looking for an alternative cooking method, they can also be prepared as Air Fryer Buffalo Wings, offering a crispy texture with less oil. However, for that authentic BBQ taste and amazing aroma, the grill is truly the way to go. This dish is also an excellent addition to your collection of Pellet Grill Recipes, showcasing how versatile your outdoor cooking equipment can be.

Mastering the Grill: The Perfect Cooking Time for Buffalo Wings

Achieving perfectly cooked, succulent grilled buffalo wings is simpler than you might think, especially with the right tools and techniques. Generally, grilled wings only take about 20-25 minutes to cook at a consistent temperature of 450°F. However, the exact cooking time can vary based on the thickness of your wings, your grill’s precise temperature, and external factors like ambient air temperature. The most crucial aspect of cooking any meat, especially chicken, is ensuring it reaches a safe internal temperature. Therefore, always have a reliable meat thermometer or a probe thermometer on hand.

While this recipe highlights the advantages of pellet and charcoal grills, the principles can be adapted for a gas grill. The key is to maintain a consistent medium-high heat. With a pellet grill, such as a Traeger Wood Pellet Grill or a Green Mountain Wood Pellet Grill, you gain the added benefit of a controlled smoky environment. The wood pellets slowly burn, infusing the chicken with a delicious smoky essence that complements the spicy buffalo sauce beautifully. Charcoal grills, on the other hand, offer an intense, direct heat that can create a wonderfully charred and crispy skin, along with a deeper, more robust smoky flavor.

Before hitting the grates, ensure your wings are properly seasoned with your favorite dry rub. A good dry rub not only adds another layer of flavor but can also aid in achieving that desirable crispy skin. Once seasoned, place the wings directly on the grill grates. Cook them on medium-high heat, around 450°F, turning them occasionally to ensure even cooking and to prevent burning. The goal is to cook them through and develop a beautiful, slightly charred exterior before they are coated in the buffalo sauce.

The internal temperature of chicken wings needs to reach a minimum of 165°F to be considered safely cooked. However, for the best texture, particularly when it comes to chicken wings, many chefs and home cooks recommend cooking them to a slightly higher temperature. By allowing the internal temperature to reach 175°F to 180°F, you give the fat and connective tissues more time to render and break down, resulting in exceptionally tender meat that practically falls off the bone, alongside a wonderfully crispy skin. This extra rendering time makes all the difference in achieving truly superior chicken wings.

The instant-read thermometer is an indispensable tool for grilling. I’ve personally relied on one for years, and its inexpensive price tag belies its transformative power in the kitchen. It ensures you never overcook your meat, leading to consistently moist, tender, and flavorful results. This precision in cooking time is what guarantees the most succulent chicken, taking the guesswork out of grilling and elevating your culinary skills.

Expert Tips for Grilling Flawless Buffalo Wings Every Time

Creating perfect grilled buffalo wings involves a few key techniques and considerations that can significantly enhance their flavor and texture. This recipe is adaptable for both pellet grills and charcoal grills, each offering unique benefits. If you’re using a pellet grill, the type of pellets you choose plays a crucial role in the final flavor profile. While any pellets will work, experimenting with different flavors can lead to exciting results. We often use a variety of wood pellets, such as hickory for a strong, smoky punch, applewood for a milder, fruity undertone, or a blend of oak and maple for a balanced, rich flavor. Your choice of pellets directly impacts and elevates the smoky essence of the chicken, making it a truly personalized culinary experience.

When it comes to buffalo wings, the sauce is undeniably the star of the show. For this recipe, I highly recommend making your own Buffalo Sauce, using Frank’s Hot Sauce as the foundation. Homemade sauce allows for customization of heat and consistency, ensuring a perfect coating for your grilled masterpieces. The rich, tangy, and spicy notes of a freshly made buffalo sauce truly complement the smoky grilled chicken.

After your wings are perfectly grilled, it’s time for the saucing. I prefer to prepare the sauce in a large bowl, then individually dip each wing, ensuring it’s thoroughly coated. This method guarantees every crevice is infused with that irresistible buffalo flavor. Once coated, place the wings on a baking sheet lined with parchment paper or aluminum foil. Allowing the wings to rest for about 3-5 minutes after saucing is a small but crucial step. This brief resting period allows the sauce to slightly set or “harden,” creating a less messy eating experience and ensuring the sauce adheres beautifully to the crispy skin.

Alternatively, for a quicker and perhaps less hands-on approach, you can place the grilled wings in a large Ziplock bag with the buffalo sauce, seal it, and gently shake until all the wings are evenly coated. Both methods yield delicious results, so choose the one that best suits your cooking style and convenience. Of course, if you’re short on time or prefer a ready-made option, simply buying Frank’s Buffalo Sauce and using that is perfectly acceptable and still delivers that iconic flavor profile.

Beyond the sauce, the initial seasoning of the wings is equally important. We love to kick things up a notch by seasoning the raw wings first with Weber Kick’n Chicken Seasoning. This blend imparts a fantastic zing and depth of flavor that penetrates the meat as it cooks on the grill. This seasoning is widely available at most local grocery stores, making it an easy addition to your prep routine. If you prefer, feel free to use your own favorite dry rub or seasoning blend. The goal is to build layers of flavor, ensuring that even before the buffalo sauce, your wings are incredibly delicious and ready to be transformed into great party wings.

Perfect Pairings: What to Serve with Grilled Buffalo Chicken Wings?

Grilled Buffalo Wings are undeniably the star of any spread, but choosing the right accompaniments can elevate the entire meal. These wings are incredibly simple to make and even better to devour, especially when paired with their classic sidekicks. A crucial component to serving buffalo wings is a cool, creamy dipping sauce that provides a welcome contrast to the spicy heat of the wings.

ranch dressing

Here are some of the favorite dressings and side dishes that perfectly complement grilled buffalo chicken wings:

Classic Dipping Sauces:

  • Ranch Dressing: The cool, tangy creaminess of ranch is a timeless pairing that soothes the palate and enhances the wing’s flavor.
  • Blue Cheese Dressing: For those who appreciate a bolder, more pungent flavor, blue cheese dressing is an iconic match for buffalo wings, offering a rich and savory counterpoint.
  • Barbecue Sauce: While buffalo sauce provides the primary flavor, a side of tangy or sweet barbecue sauce can offer an alternative dipping option for those who enjoy variety.

Refreshing Side Dishes:

  • Crisp Celery Sticks: A quintessential accompaniment, offering a refreshing crunch and a natural palate cleanser between bites of spicy chicken.
  • Fresh Carrot Sticks: Similar to celery, carrots provide a sweet, earthy crunch that perfectly balances the heat.
  • Coleslaw: A creamy, crunchy coleslaw offers a cool and tangy contrast, making it an ideal side dish.
  • Potato Salad: A hearty and comforting potato salad can make your wing feast feel like a complete meal.
  • French Fries or Tater Tots: Classic comfort food sides that absorb extra sauce and are universally loved.
  • Corn on the Cob: Grilled corn on the cob adds another layer of summery, smoky flavor to your outdoor meal.
  • Side Salad: A light, fresh green salad can provide a refreshing element and cut through the richness of the wings.

Serving your grilled buffalo wings with a selection of these dips and sides ensures a well-rounded and satisfying meal that caters to various tastes and offers a delightful culinary experience.

Storing and Reheating Leftover Chicken Wings with Ease

Sometimes, despite our best efforts, we end up with a few delicious grilled buffalo wings leftover. Don’t let them go to waste! Proper storage and reheating techniques can keep them tasting great for another meal or snack. Cooked chicken wings can be stored safely in an airtight container in the refrigerator for up to 3-4 days. Ensure they are completely cooled before placing them in the container to prevent condensation, which can lead to sogginess.

When you’re ready to enjoy your leftovers, there are several effective reheating methods:

  • Microwave: For a quick reheat, place the wings on a microwave-safe dish and heat for 2-3 minutes, or until warmed through. Be aware that the microwave tends to soften the skin, so this method is best if crispiness isn’t your top priority.
  • Air Fryer: To bring back that glorious crispiness, the air fryer is your best friend. Preheat your air fryer to 350°F (175°C) and cook the wings for 5-10 minutes, flipping halfway through, until they are hot and crispy. This method is excellent for achieving a texture similar to freshly grilled wings.
  • Oven: If you have a larger batch of wings, the oven is a great option. Preheat your oven to 375°F (190°C). Arrange the wings in a single layer on a baking sheet lined with parchment paper. Bake for 10-15 minutes, flipping them once, until thoroughly heated and the skin has crisped up.

For longer storage, chicken wings can be frozen. Place cooled wings in freezer-safe bags or containers, ensuring as much air is removed as possible to prevent freezer burn. They can be stored in the freezer for up to 3 months. When ready to eat, thaw them overnight in the refrigerator before reheating using one of the methods above, with the air fryer or oven being preferred for best results.

Grilled Buffalo Wings made on the Pellet Grill truly stand out as the BEST game day party recipe, effortlessly serving a crowd and leaving everyone craving more. The combination of smoky flavor, spicy sauce, and tender chicken makes them an undeniable hit.

Savor every bite of these incredible buffalo chicken wings. If you’re also a fan of traditional wings and want to explore other smoked options, be sure to try the best crispy smoked chicken wings with this recipe for another fantastic pellet grill experience!
