Slow Cooker Salsa Chicken Stuffed Potatoes

Ingredients

  

  • 2 Lbs Boneless Skinless Chicken Breast (About 2 Medium Chicken Breasts)
  • 1 Cup Salsa (Use homemade or your favorite store-bought)
  • 1 Jalapeno Pepper (Diced, seeds removed for less heat if desired)
  • Potatoes:
  • 4 Large Baking Potatoes
  • Foil
  • Optional Toppings: Sour Cream, Shredded Cheese, Extra Salsa, Fresh Cilantro, Butter, Black Beans, Green Onions, Avocado, Corn

Instructions

  • 1. Lightly spray the inside of a 4-5 quart slow cooker with nonstick cooking spray.
  • 2. Place the chicken breasts evenly in the bottom of the slow cooker. Pour the salsa over the chicken, ensuring it is well covered.
