  • 1/2 Tsp Salt
  • Zest from 1 Small Orange About 1/2 Tbsp
  • 1/2 Cup Orange Juice
  • 1/2 Cup Silk Vanilla Soy Milk
  • 1 Egg
  • 1 Tsp Vanilla
  • 1/2 Cup Dried Cranberries

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large mixing bowl, combine all ingredients except the dried cranberries. Mix well until the batter is just combined and smooth. Be careful not to overmix. Gently fold in the dried cranberries until evenly distributed.
