Ingredients

  • 1 lb Ground Beef
  • 2 10.5 oz Cans Gluten-Free or Regular Cream of Mushroom Soup (or 2 1/2 Cups Homemade)
  • 1 4.5 oz Can of Green Chilies
  • 16 oz Jar of Pace Picante Sauce (or your favorite Salsa)
  • 1 8 oz Can of Tomato Sauce
  • 1 Cup of Uncooked White Rice (Quick Cooking Rice is recommended)
  • 2 Cups of Shredded Cheddar Cheese
  • 1 Bag of Fritos (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium-high heat until fully cooked through. Drain any excess grease.
  3. Once the beef is browned, add in the cream of mushroom soup, green chilies, Picante sauce (or salsa), tomato sauce, and uncooked quick-cooking rice. Stir well to combine all ingredients.
  4. Bring the mixture to a gentle simmer over medium heat, stirring occasionally, until it’s nice and bubbly. This usually takes about 5-7 minutes.
  5. Lightly spray a 9 x 13 inch baking dish with non-stick cooking spray. Pour the entire meat mixture evenly into the prepared dish.
  6. Crush approximately 2 cups of Fritos corn chips and sprinkle them generously over the top of the meat mixture.
  7. Evenly distribute the shredded cheddar cheese over the Fritos. Alternatively, if you prefer the Fritos to be super crispy, you can add both the Fritos and cheese in the last 5 minutes of bake time.
  8. Bake in the preheated oven for 30 minutes, or until the casserole is bubbly and the cheese is melted and golden.
  9. Carefully remove from the oven and let it rest for a few minutes before serving hot.

Be sure to use quick-cooking rice, such as Minute Rice, for the best results and to ensure it cooks thoroughly within the casserole.

If you prefer the Fritos to be extra crispy and the cheese perfectly gooey, consider adding both toppings in the final 5 minutes of cook time.

For a gluten-free version, ensure your cream of mushroom soup is certified gluten-free, or use a homemade gluten-free alternative. Most other ingredients are naturally gluten-free, but always check labels.
