Mastering the Homemade Chicken & Waffle Sandwich

Creating these heavenly sandwiches at home is a rewarding process. While the recipe seems elaborate, breaking it down into manageable steps makes it approachable for any home cook. The key is in preparing each component with care, ensuring the chicken is perfectly seasoned and cooked, the waffles are light and crispy, and the eggs are poached to runny perfection. This comprehensive guide will walk you through each step, providing tips for success and ideas for customization.

Why Oven-Fried Chicken?

For this recipe, we opt for oven-fried chicken breasts. This method provides a wonderful crispiness without the excessive oil and mess of traditional deep-frying. It’s a healthier alternative that still delivers on flavor and texture, making the dish feel less heavy while still being incredibly satisfying. Flattening the chicken breasts ensures even cooking and a more manageable size for sandwich assembly. The blend of flour, salt, paprika, and pepper creates a simple yet effective coating that crisps up beautifully in the oven.

The Art of Belgian Waffles

Belgian waffles are known for their deep pockets, which are ideal for holding syrup, egg yolk, and other toppings. Using buttermilk in the batter is crucial, as it reacts with the baking powder to create a light, fluffy texture and a subtle tang that complements the sweet elements. Don’t rush the waffle-making process; ensure your waffle iron is adequately preheated for that perfect golden-brown exterior and tender interior. If you don’t have a Belgian waffle maker, a standard waffle maker will work, but the texture might be slightly different.

Perfecting Poached Eggs

A perfectly poached egg is the crown jewel of these sandwiches. The runny yolk acts as a luxurious sauce, adding richness and moisture to every bite. The key to poaching is fresh eggs and gently simmering water, perhaps with a splash of vinegar to help the whites set. Avoid rapid boiling, which can break the egg apart. Practice makes perfect, but even a slightly imperfect poached egg will still taste amazing with this combination.

Ingredients

  • Chicken:
  • 2 Large Chicken Breasts Flattened to 1/2 inch thickness
  • 1 ⁄2 Cup All Purpose Flour or Gluten Free All Purpose Flour
  • 1 Tsp Salt
  • 1 Tsp Paprika
  • 1 ⁄4 Tsp Pepper
  • Waffles:
  • 2 Cups All Purpose Flour or Gluten Free All Purpose Flour
  • 3 Tsp Baking Powder
  • 1 Tsp Salt
  • 2 Cups Buttermilk
  • 1 ⁄2 Cup Sugar
  • 2 Eggs
  • 1 Tbsp Vanilla Extract
  • Sandwiches:
  • 4 Belgian Style Buttermilk Waffles
  • 2 Oven Fried Chicken Breasts
  • 4 Poached Eggs

Instructions

  • 1. Prepare the Oven-Fried Chicken: Start by preheating your oven to 400°F (200°C). In a shallow dish, combine the all-purpose flour (or gluten-free alternative), salt, paprika, and pepper, mixing thoroughly to create your seasoning blend. Take each flattened chicken breast and dredge it completely in the flour mixture, ensuring it’s evenly coated on all sides. Place the coated chicken breasts on a lightly greased baking sheet, allowing space between each piece for even cooking. Bake for approximately 20 minutes, then carefully flip the chicken breasts and bake for an additional 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) and is golden brown and crispy.
  • 2. Whip Up the Belgian Waffles: While the chicken is baking, prepare your waffle batter. In a large mixing bowl, combine the 2 cups of all-purpose flour, 3 teaspoons of baking powder, 1 teaspoon of salt, 2 cups of buttermilk, 1/2 cup of sugar, 2 eggs, and 1 tablespoon of vanilla extract. Whisk until just combined, being careful not to overmix; a few lumps are fine. Cook the Belgian waffles according to the specific instructions of your Belgian waffle maker. This recipe should yield approximately 4 large, fluffy waffles, perfect for your sandwiches. Keep them warm while you prepare the remaining components.
  • 3. Assemble the Base: Once both the chicken and waffles are ready, begin assembling your sandwiches. Place one perfectly cooked oven-fried chicken breast onto one of the warm Belgian waffles. Repeat with the second chicken breast on another waffle. These will form the lower half of your hearty sandwiches.
  • 4. Poach the Eggs to Perfection: Now it’s time for the star topping – the poached eggs. For each egg, crack it gently into a small bowl or ramekin. In a saucepan, bring about 2 cups of water to a gentle simmer (not a rolling boil). Carefully slide one egg from its bowl into the simmering water. Allow it to cook for approximately 3 minutes for a perfectly runny yolk, or longer if you prefer a firmer yolk. Using a slotted spoon, carefully remove the poached egg and place it directly on top of a chicken breast. Repeat this process for the remaining eggs, aiming for two poached eggs atop each chicken breast for a truly indulgent experience.
  • 5. Complete and Serve: Once all the eggs are delicately placed over the chicken, gently position another Belgian waffle on top to complete each sandwich. For easier serving and consumption, carefully slice each large sandwich in half. Serve immediately, perhaps with a drizzle of warm maple syrup, a dash of hot sauce, or a sprinkle of fresh chives for an extra touch of flavor. Enjoy this magnificent meal!
