Ingredients

Night Before:

  • 2 Cups Steel Cut Oats
  • 2 Cups Water

Baked Oats:

  • Soaked Oats (from above)
  • 1/4 Cup Brown Sugar
  • 2 Tsp Baking Powder
  • 1 Tsp Salt
  • 1 Tsp Cinnamon (additional for topping)
  • 2 Eggs
  • 1 Cup Milk
  • 1 Diced Gala Apple
  • 1/4 Cup Currants or Raisins

Instructions

  1. The night before, combine the steel cut oats and water in a bowl. Let them soak overnight until soft.
  2. To bake the oats, preheat your oven to 350°F (175°C).
  3. In a large bowl, combine the soaked oats (drain any excess liquid if necessary), brown sugar, baking powder, salt, cinnamon, eggs, milk, diced apples, and currants (or raisins). Mix all ingredients thoroughly until well combined.
