  • 2 Tsp Balsamic Vinegar
  • 1 Tbsp Whole Grain or Dijon Mustard
  • 2 Tsp Marjoram
  • 2 Tbsp Capers
  • 1/4 Cup Extra Virgin Olive Oil
  • Salt/Pepper to taste
  • 2 Hard Boiled Eggs Sliced (my adaptation)

Instructions

  1. Set the cooked and quartered potatoes in a large bowl.
  2. In another bowl, combine the balsamic vinegar, mustard (whole grain or Dijon), marjoram, capers, extra virgin olive oil, and the sliced hard-boiled eggs. Mix this dressing thoroughly until all ingredients are well combined.
  3. Gently toss the dressing with the warm potatoes, ensuring every potato piece is coated.
  4. Add salt and freshly ground black pepper to taste, adjusting as needed.
