Blackberry Cobbler Ice Cream Cake

Ingredients

  • 2 Mrs. Smith’s Blackberry Cobbler
  • 1/2 Gallon of Vanilla Ice Cream
  • 1 Carton of Whipped Topping
  • Fresh Blackberries or Canned Blackberry Pie Filling (for garnish)

Instructions

  1. The day before serving, allow the vanilla ice cream to soften slightly. Evenly spread it into a 9×13 baking dish that has been lined with foil or parchment paper on the bottom. This lining will ensure easy removal of the frozen ice cream. Place the dish back in the freezer until the ice cream is firm.
  2. Bake the Mrs. Smith’s Blackberry Cobblers according to the package instructions. Once baked, let them cool completely for 2-3 hours at room temperature, or place them in the refrigerator to speed up the cooling process. Ensure they are fully chilled before the next step.
